Fantastic!

I cant even describe these pancakes... They are fluffy but still moist...not dense yet fills you up. I make these in multiple batches and save them. My daughter and I are obsessed with these.

These are the best pancakes!! Usually pancakes are a bit too heavy to me, but the ricotta and lemon help brighten these up and it's perfect. Make them!!!! I made a batch for the week for bf and me and we are heating em in the toaster oven for a quick breakfast. They reheat well, don't dry out. The lemon actually tastes stronger than when they were fresh too

Amazing pancakes, they are very light and fluffy! My whole family loved them! We made it with about half the lemon zest and it still had a bit too much lemon flavor for us. We had them with some homemade strawberry syrup and it was delicious! We will definitely make these pancakes again!!

@@jannatulferdous6709 My guess is that you could use *cottage cheese* blended smoothly, but I would think cream cheese would be too dense and too tart for this recipe.

I made this! The pancakes are light as air and so easy to eat. Love the lemon zest it adds such delicate flavor. Perfect to eat with maple syrup😍 thank you for an excellent recipe

Love this recipe, one of the favs and we've even converted some family members who thought cheese in pancakes was weird. Today I tried a fall twist. I added a little pumpkin puree and pumpkin pie spices instead of lemon...delicious!
