Minor correction: Most restaurants no longer source their fish from Tsukiji since the market itself moved to Toyosu. The larger shops also opened places in Toyosu, but it doesn't have the character of Tsukiji.

Contrary to popular belief: most sushi is not raw, but rather prepared for consumption by freezing, aging, salting, brining and marinating. Plus, each condiment is a preparation in and of itself: the sushi vinegar, soy sauce, wasabi and ginger are there for a reason beyond taste, they make the seemingly "raw" fish safer to consume.
