How to make the Chicken Parm Melt from the video:
Step 1.
Finely dice the shallots and mince two of the garlic cloves. Add plenty of olive oil to a medium saucepan and set over medium heat.
Step 2.
Add the chopped tomatoes, parmesan rind and the basil stalks. Bring to a simmer, reduce the heat and cook for 15-20 mins until reduced. Season with salt and pepper and set aside.
Step 3.
To make the pesto aioli, combine the fresh pesto, mayonnaise and grate in the remaining garlic clove. Season with salt and mix to combine.
Step 4.
Now for the chicken. Butterfly each breast, cover with a sheet of baking parchment and bash with a pan until you have an even thickness.
Step 5.
Now pop your flour, eggs and breadcrumbs in 3 separate bowls. Season the flour with salt and pepper. Beat the egg and season that, too.
Step 6.
Pass each breast through the flour, dusting off any excess and place it into the egg. Allow any excess to run off before coating it in the breadcrumbs. Reserve on a tray and repeat with the remaining chicken.
Step 7.
Preheat the grill to medium-high (200°C).
Step 8.
Cover the bottom of a frying pan with oil and set over a medium heat. Once hot, lay your first chicken breast down and cook until golden brown and crispy.
Step 9.
Flip it over, give it a baste and cook until the whole thing is golden, brown and the chicken is cooked through. Pop onto a tray and repeat with the remaining chicken.
Step 10.
Once the chicken is cooked off, top each with a spoon of tomato sauce, a few slices of mozzarella and heaps of parmesan cheese.
Step 11.
Pop it under the grill until the mozz is melty and the parmesan is starting to caramelise. Meanwhile, toast your buns.
Step 12.
To assemble, add another spoon of tomato sauce to the bottom bun. Top with the chicken and a few basil leaves. Chuck a big spoon of pesto aioli on the top bun and smash it on top.
Step 13.
Give it a squish, and get stuck in.

2 Shallots

140g Plain Flour

    I'm more offended by the fact that he used chicken breast for Schnitzel. Schnitzel is typically pork. The sandwich also looks super dry. Might as well eat a mouthful of seasond sand.

    Looks good but not a schnitzel, closer towards a tonkatsu. For a schnitzel you only season the meat, not the flour, also you use semmelbroesel not panko and finally it’s fried in lard not oil.

    I mean, katsu basically comes from Schnitzel brought to Japan by German foreigners. But even in Japan, torikatsu is pretty rare. Also: Katsu is deepfried.@@korosilverwolf

    Ein Schnitzel muss schwimmen ! A Schnitzel has to swim. Meaning, you have to use way more oil Trust me it will be in a whole new Level. Next level is to use gee (clear Butter)

    dont call it schnitzel. if you want to make a fancy one, use veal and make your own breadcrumbs from old white bread. also serve it with a potato salad that does NOT contain mayonnaise.

    @@graffity_x6624 Schnitzel originates from Austria. Some speculate that they have it from Italy, but there hasn't been any proof about that one. So Schnitzel is Austrian cuisine, but belongs to German culture as well. Austria and Germany are right next to each other and both have German as their mothertongue.

    all the germans here complain about the schnitzel because it wasn't fried in lard or butter, but ashkenazi jews had made schnitzel like this for ages. also, panko breadcrumbs are the best for frying, although i usually prefer a mix of breadcrumbs. looks great! keep up the great work

    - use Veal - flatten it thin - use breadcrumbs, not panko - fry in a mix of oil and clarified butter - oil should be deeper than the thickness of the schnitzel - super hot oil, schnitzel is floating - since the meat is thin it only fries a minute per side

    uhh, that's not how OCD works. I know you were making a joke, but OCD really shouldn't be taken as lightly as people make it out to be. OCD is one of the most debilitating mental disorders out there. It's like when people say, "I'm so OCD." It makes OCD seem trivial and really downgrades the severity of it. And no, not everyone is a "little OCD." Either you are or you aren't. Finding enjoyment from something like a perfectly cut burger or being annoyed by something out of place does not count as OCD. OCD stands for Obsessive Compulsive Disorder. It's an anxiety disorder that impacts a persons everyday life and can lead to other mental disorders and illnesses such as depression and self harm.     Failed around the 3 second mark when you took out a chicken breast. I laughed so hard, no joke. I just paused the video, to write this comment - no need to watch further. Don't call it schnitzel when you don't even use the correct meat. It's done with veal traditionally. And veal is pretty easy to find.

    That's just incorrect. Schnitzel can be made of veal, pork, chicken, beef, turkey, or mutton. Wiener schnitzel is the only one that has to be veal.

    Schnitzel requires deep fry, cooking is done in like 20 seconds any more than that it is dry abomination. I make it way better than this and I am no chef.
