Learn How to Filter Oils and Clean Your Deep Fryer - Cajun Fryer Cleaning Techniques

Тәжірибелік нұсқаулар және стиль

In this video, we'll show you how to filter oils and clean your deep fryer. We'll also give you tips on how to keep your fryer clean and smelling great! This will extend the life of the oil and save you money. Have ever fried anything that has a coating, especially if bread crumbs or cornmeal is used? Did you notice that the shortening or oil will have coating particles in your oil? These particles tend to burn and shorten the life of the oil. If you want to reuse the oil to cook more items without filtering the oil, the food may absorb the burnt flavor of the oil and become inedible. Therefore, we want to clean the oil and the fryer so that none of the particles can burn and make the foods taste bad. If you will not reuse the oil very soon, store the oil in an airtight container until ready to use.

I've been filtering my oil for years. When empty I use a water hose to fill it up to the oil level in the cooker. I then add plenty of Dawn dishwashing liquid and fire up the burner. Let it come to a boil with the lid closed. It will clean it like a dishwasher. Just drain, rinse and dry.

Water entrapment is always a big potential problem with anything from spatter to boil up. You will see the same thing in lead melting for casting bullets, where trapped moisture will evaporate and rise to the top in the same way it does in our oil fryers, with dangerous consequences. A point well worth reminding everyone.

Where did you get the filter for the funnel? I have that same funnel but not through paper filter

I want to clean my fryer that has set up for quite some time. The oil has been drained, but there is meal sediment and old oil remnants in it. A friend recommended that I use a fryer puck (sodium carbonate and sodium hydroxide) but I’m afraid it will do bad things to my fryer which is one of the high carbon steel fryers by RV. The method I am going to try first is just dishwashing soap and boiling it in the oil chamber while scrubbing. Please let me know your thoughts. Thanks for the help.

That is exactly what I would do. Even if there is a lot of buildup, it will take most of it off.

Do you have to have a different oil for everything you fry?

Because I keep my oil clean i usually do not change it unless I cook fish. I have some oil that I use only for fish. This way the other types of food I fry do not taste like fish.

Sounds like you store the cleaned filtered oil in your fryer. How do you protect it and do you keep the baskets in the fryer also??

I do store the oil in the fryer, I use my fryer at least every other week. I have a cover that fits over the fryer and it keeps all of the bugs and dirt out. Here is a link to the cover I use.amzn.to/3cfpuoB

If you put the screen in below the filter it will go much faster. It keeps the filter which gets full of batter particles from stopping up the hole.

How often do you filter the oil? After every use?

  • @SouthernBackyardCooking

It depends on what i am frying. If I fry something that has a lot of breading that could fall off, I filter every time. Otherwise, every tow to three uses.

Two things that you can tell is the oil will start real slowly bubbling and will give a real bitter taste.

Very good, I think it is much better than a Bayou Classic. That is made from stainless and the is from thick rolled steel.
