It’s a great feeling pulling the last doughs out of the oven, then presenting them in bakery and packing up for deliveries. I used to bake by myself, many days I would look at all the bread and feel complete in life, then remember, tomorrow we start all over again. What a privilege....

It’s a sad day when we only associate the word’ bakery’ with sweet breads and confections. I miss being able to run to town and get a fresh loaf. There should be a proper bakery in every town!

Jo, I used to get good breads in a local market, here in Billings, but they went out of business. Since then I have acquired a few items like a baking stone, and a Super Peel, to go with the Kitchen Aid mixer I got for my 40th birthday 25 years ago, watched some videos on KZread, was gifted the book “Artisanal Breads in 5 Minutes a Day,” started my own sourdough starter with both unbleached all purpose flour and another one with rye flour. A couple of weeks ago I mixed up my own spin on European Peasant Loaf herbed up with dill, caraway, rosemary, thyme and basil. The first day I made two large pizzas with half of the dough, and a few days later took the rest of the dough and made two nice herbed French loaves, ate one fresh and froze the second for later. I grew up with a “stay-at-home-Mom” who pretty much cooked everything from scratch to stretch the family food dollars. It was not drudgery to her, but an outlet for creativity. When she made soup from scratch for dinner, (DINNER!) she baked two big loaves of white bread to serve with it, and as dessert with jelly or jam. I learned to love the smell of baking yeast loaves, and decided that I would learn how to do it myself. Living for a decade in the Bay Area I learned to love San Francisco Sourdough Bread. Since I can’t get it here in MT, I learned how to bake a credible substitute in my home oven with just a stone and a pan of water to make a crunchy chewy crust. Don’t lament, strike back, be creative, grow a garden, plant a fruit tree, bake a loaf, hit up KZread and learn how to do things for yourself and your family.

Le pain paysan, le vrai, est un délice et très sain, c'était l'aliment n°1. Si on a du bon pain c(est 75% du menu qui est assuré. Ces pain de la vidéo sont en plus très attrayants au regard, magnifiques. Bravo les gars, cela me met l'eau à la bouche.
Vous avez un métier magnifique et à l'ancienne c'est la perfection , je suis loin d'être boulangère mais je sais le plaisir que procure le fait d'offrir du bon pain fais main et confectionné avec amour .

I was raised on fresh baked bread. Mass produced store bought is no comparison to what these folks are creating. The skill and devotion that is put into their craft is apparent. I can visually smell the bread baking. Beautiful.

Tu auras après ton apprentissage.le temps d aller dans de belles boulangerie...très beau métier..bravo pour ton courage ..car moi aussi j ai fais mon apprentissage en boulangerie..et ce lever c était dur quand tu as 16ans..je commençais a 6h du matin et je devais aller au travail a vélo 16kms..et bien sûr samedi et dimanche nous on était au taf....c était vraiment très dur mais j ai tenue...et maintenant je suis pâtissier en restauration...

My family baked bread for hundreds of years,( no one knows when it began, probably in the 1500s),The bakery closed in 2001 after generations of baking. So for me to see this video moves me and makes me feel that their is still good in the world.
