    I’ve had a canning question for years and you are so knowledgeable that you are probably the best person to ask. I am Mexican and we eat a food called Menudo (it’s tripe and hominy in a Chili based broth). When we make it we usually make big pots so there’s often leftovers. How would I go about canning these left overs. I know a video on this would be very helpful because there’s a whole thread on this subject on Reddit and many people want to know. I’ve also looked here on KZread and can’t find a video. Thank you

    You should be able to ladle the leftovers into clean jars and process like she did in the video. 75m for pints, 90m for quarts in pressure canner.

    I'm so sorry it has taken me a couple weeks to reply.... I'm having issues getting back into a regular routine after Roger's illness. If your broth has thickened with the cooking process.....thin with a little additional broth before canning. Simply fill your jars to 1" headspace and PC Pints 75, Quarts 90....or hot water bath either size jar for 3 hours. Both the tripe and the hominy need that long of a process. If wanting to CREATE this in a jar.... boil/cook your tripe as usual, and then cut it up. Equally distribute the tripe, hominy, carrots (do not use the convenient "baby carrots" as they have been rinsed with chlorine....and that chlorine/bleach taste intensifies greatly in canning) and seasonings through your jars. Then cover to 1" headspace with broth. PC or water bath per instructions above. If using cilantro as one of your seasonings....be very conservative with it as that also intensifies with canning.     ​@@millermeadows6359 I had a bad slip and fall (ice) off the porch and ended up on the ground with 2 buckets of wood on top of me. Sliced open my shin (to the bone) and everything came to an abrupt stop. This week I hope to get it all done.

    Oh my heavens!! So sorry to hear that! Glad that you are healing....and hope there was no infection issues! Will add you to our prayer list! Hope that you are able to catch up with things that have needed to be put aside while you were healing...but of course go SLOW at it until you are fully healed up!! We all tend to over do when we are feeling a bit better after things like this....

    Wow....thats terrible! If you can get some dried chili peppers, you can just grind your own. Place dried peppers into an electric coffee grinder to powder....

    Any pepper your desire could be substituted. Bell peppers of any color....Banana peppers...if you like it hot, even a few slices of jalapeño. Make it to your own taste and desire.
