Canned Pumpkin/Squash Pie Filling

In this video, I share the way that I have canned home made Pumpkin/Squash Pie Filling for decades.
Yes, this is a sweetened and seasoned pie filling.
Home made Bisquick Dry Mix:

6C Flour
3Tbls Baking Soda
1 Tbls salt
1C Shortening
Mix until it resembles Corn Meal.
Store in a dry Cool place....or refrigerate.

    Hi Lorrie; can this pumpkin/squash filling be processed in quarts? Also, could I pressure can the quarts (or pints) and for how long?

    Due to the density of the product, I suggest sticking to Pint size jars. There's not many items I feel that's a necessity....but this, and Alfredo sauce are 2 of them. I also do not suggest using your PC for this pie filling as the sugar content would cause it to scorch and taste burnt. PC is just to high of heat for items that have natural or added sugar in them. You can however, use your PC as a steam canner. Same time and effect as hot water bath....but much less water to heat up. I have a tutorial on how to do that in my studio if your interested....🥰

    I have a question.... I have so much frozen pumpkin and squash. Have you ever used thawed product for canning?

    For this pie filling, it works amazing since it's a mashed product anyway. Previously frozen squash would not hold up in "chunks or pieces" well however in a canned soup or stew.

    Hi ms.lorrie, how are yal, ual ate on my prayers, i have a question on dry packing potatoes 🥔, i want to dry pack, i watched you're video on dry packing, but my question is can i water bath , tand use tbe dry pack mettod i know i need some thing to hold them down , but what is the timing process. Or should i j6st get a pressure canner?help please. Tyfs.

    As you mentioned, you will need to hold them down to keep them from floating. I place my filled jars in an empty canner. Place an extra rack on top of them, and then set full quarts of water on top of that as my weight. THEN I fill the canner with water. Starting empty and placing the jars in much easier when working with dry packed jars that want to float around. 3 hour (180 mins) hot water bath. 🥰
