There was a guild in Yggdrasil named Cat Kingdom. This guild on all available NPCs levels created lvl1 cats

To explain where you got lost, Demiurge can only summon one lord, but he has 7 permanent lords as subordinates. They all can summon a lord themselves, for a total of 15 lords under his command, because the lord he summons cannot summon a lord itself. So the 7 can all summon one lord effectively doubling the amount, and then he can summon one, for a total of 15

I bet there is some videos about the other guild members you could watch because Ainz seems almost vanilla compared to some of his guild mates

Not really. People more powerful/better than ainz at pvp are touch me, Ulbert (confirmed). Cocytus creator and the other guy who taught ainz strategy are probably same or slightly weaker than ainz.
