INGREDIENTS
3 packages instant noodles
3 soup bases from a packet
1-2 cups soup base liquid
⅓ cup skippy smooth peanut butter
Chili crisp
1 small bunch cilantro, chopped
1 bunch green onion, chopped
3 eggs
¼ cup toasted sesame seeds
COOKING METHOD:
1. In a small saucepan, add two cups of water and bring to a boil. Add noodles and cook according to package instructions. Drain noodles and set aside.
2. In a medium mixing bowl add soup base liquid, peanut butter, chili crisp, cilantro, and green onion. Set aside.
3. In a small nonstick skillet over medium-high heat, add butter or oil. Once shimmering, add eggs and fry until the outer edges are golden brown and crisp and the whites are fully cooked.
4. Add the cooked noodles to the mixing bowl and toss to combine. Transfer to a serving bowl and top with sesame seeds, cilantro, and fried egg.

Yup, they were inside another resto and serve you over the front windows. I don't like peanut butter but they ad teriyaki sauce too. It was St-Laurent / Av. des pins. Don't know if it still exist.

Matty, in my eyes, this dish makes you an honorary Asian. Chinese/Taiwanese people make this almost 1:1, but with sesame paste. It’s called Dan Dan Mian. And a little kick of toasted, ground Sichuan peppercorn at the end makes it truly authentic. Fun fact, when my parents immigrated there wasn’t any tahini or sesame paste to be had, so my dad had to make do with Skippy peanut butter when I was a kid. He’s the best home cook I know.
And with this video, I am convinced that Matty Matheson is my spirit animal. Thank you and have a great day.

I love awesome 10 minute dishes like this. Dan-dan noodles is one of my favs. Throw in some chopped or minced leftover pork or spam, some kimchi or bok choy or cabbage.

Thought you mentioned hoisen but didn't see listed. My go-to is EXTRA CRUNCHY PB!!! Add siracha and soy, the onions and sesame. For you I'll try the egg.
