Lasagne 🇮🇹

Ingredients
- 1 brown onion, diced
- 1 carrot, diced
- 2 sticks celery, diced
- 2 tbsp, olive oil
- 500g pork mince
- 500g beef mince
- 200ml red wine
- 2 x 400g jar tomato passata
- Parmesan 200g
- 300g Tipo 00 flour
- 3 eggs
- 1 tbsp olive oil
- Salt to taste
- 50g butter
- 50g flour
- 500ml milk
- 1/4 ground fresh nutmeg
- 350g mozzarella
- Small bunch basil
Method
1. Start with the sauce for the meat, heat the olive oil in a large pot and saute the onions, carrot and celery.
2. Add the meat and a good pinch of salt, making sure you break it up and cook for 4-5 minutes. Then, add the red wine and reduce.
3. Once the wine has evaporated, add the tomato passata and stir well, and pop in the rind of the parmesan.
4. Turn to med-low and place the lid on to cook for 1 hour. Then, remove the lid and cook for 1 more hour.
5. For the pasta, with the flour on the bench, make a well in the centre and add the eggs, oil and a pinch of salt.
6. Starting from the centre, work the dough with a fork until it starts to come together. Once it comes together, knead the dough into a smooth ball (around 8-10min).
7. Let the dough rest for 30 minutes before you roll it out. Once rolled, blanch the pasta sheets in boiling salted water for 2 minutes and then place into cold water to stop the cooking.
8. Remove from the water and place onto an oiled tray in the fridge.
9. For the white sauce, melt the butter and add the flour and stir. Cook this for 2-3 minutes and then add the milk. Whisk over medium heat until you have a smooth sauce.
10. Add 40g of grated parmesan and the nutmeg, and stir until the cheese had melted.
11. To make the lasagne, start with an oven save dish and ladle some of the meat sauce, then a drizzle of the white sauce, then a single layer of pasta, before adding more meat sauce, white sauce and some of the mozzarella and parmesan, repeat until all the pasta and sauce is used up.
12. The last layer, spread the basil before you finish it with the meat sauce but leave some of the cheese to melt 1/2 way through the baking. In total you want at least 5 layers of pasta.
13. Cover the dish with foil and bake in a 180°c oven for 20 minutes, then remove the foil and add the last of the cheese, bake again for 15-20 minutes or until the cheese is golden brown.
14. Enjoy!

@@marcbile You won't have to re-feed the pasta sheet after every press. It's really hard to pass the thin pasta sheets into the press due to the thin entrance & the thin sheets and it's a lot of hard work raising & lowering it.

Frozen goods see the molecules in the food expand and burst the water within them, watery diluted ragu, congealed white sauce, tough meat, a nasty pasta sheet with the gluten damaged leaving it sloppy in some parts and overly dried in others. 2. Frozen lasagne....,yeah because that's on every menu when you go to Italy isn't it? Yeah because that's the reputation Italian food is famed for. Wonderful frozen goods and subpar quality. 🙄🙄 3. @@andy_cooksplease, please teach us how to chop! It's the most valuable thing you could teach me. It takes me forever and really takes the enjoyment out of cooking for me. I have a spinal injury, and after chopping everything, it's usually taken so long that the pain has flared up and the rest of the process becomes a nightmare of a chore... Cooking used to be one of my favourite things to do!

I didn’t understand why the whole bar or Parmesan without grating. Doesn’t the cheese clumps in you boil it?

@@AguantelDiego86 it's only the rind (crust) of the parmesan that you dunk in the sauce. Most people just throw that in the bin, but it still packs so much flavour! This flavour is released when you add it to the sauce during stewing. You remove it before serving (like you remove a bouquet garni or bay leaves).
Holy hell that looks delicious. Right down to the homemade pasta sheets and authentic bechamel preparation. Well done, Chef Andy.

Tuscan white bean soup with farrow is delicious, it my comfort food and I would recommend making, and Perogis!
As an italian chef myself i can say that your lasagna was litterally perfect! The bolognese with the butter at the end ( i use a drizzle of milk instead) to thicken, the pasta sheet... Lovely!

The best lasagna i’ve ever eaten was always my mums, even my friends ask when my mum makes it so that they could come over and eat it. Instead of making all the layers the same, she divides them. Pasta, tiny diced mushrooms, pasta, tiny diced peppers, pasta, ground meat, pasta. And she layers it however tall she wants it. It’s so good, because it’s not overly meaty and you still get the taste of the vegetables, they are finely cubed so it’s easier to eat for those that aren’t fans of veg. And even for my vegetarian friends it’s easy to adapt, they just take of the meat layer and get to enjoy the rest. Fully recommend trying this but it is a bit time consuming, 100% worth it.

Best version of Lasagne ever seen outside of Italy! Just one suggestion, put a Laurel leaf in the sauce during cooking time and then leave it when it is ready.

Real lasagne uses neither? Also ricotta is italian. Bechemel is french. At least ricotta is more authentic 🤦🏻

@@Hello_there_obi Both are used in real lasagne (not together, in different versions). They're regional variations. I _believe_ North uses bèchamel while south uses ricotta, but I could have gotten that mixed up. Either way, both are authentic. Also, just because bèchamel was popularised by French cookery, that doesn't mean it's exclusively French. Cultures end up accidentally using the same cooking techniques as each other all the time. It's entirely possible that some Italian person independently came up with that. There's also the possibility that bèchamel really was introduced to Italy through the French, but that doesn't automatically mean the use of it in Italian cooking is not authentic. Tomatoes aren't native to Italy - they're not native to the Old World at all - and yet they have a strong presence in Italian cuisine.
The only thing that could make this better is immediately putting the lasagne in the fridge after its done cooking and then reheating it the next day.

As an italian living in Bologna, Andy's lasagna looks quite fine. Mozzarella Is usually put in Neapolitan lasagna (that Is a differente dish) but many Italians put It also in Bolognese one (even of it's not parte of the traditional recipe)

As an italian i can say, you nailed the recipe! Sometimes I see some horrific abomination but you didn’t do it badly.(Even though we put no slices of cheeee or even sage in it)
As an Italian, I really like Lasagne and you made it wonderfully! Well done 😎
You cook a perfect lasagna and then you ruin it with mozzarella and basil
