Langar style dal at home | घर में बनाएं लंगर वाली दाल | Langar Dal Recipe | Chef Ajay Chopra
Langar Wali Dal Recipe Details
Ingredients:-
1bowl urad dal
1bowl broken Chana Dal
Salt to taste
½ tsp Red Chili Powder
½ tsp Turmeric Powder
2½ tsp Coriander Powder
2-3 Bay Leaves
1tsp Mustard Oil
½ Ginger
3-5 cloves of Garlic
2-3tbsp of Mustard oil
1-2 tsp jeera
2dry Red Chilly
2-3 Green Chilly
½ Ginger
5-6cloves of Garlic
1-2 chopped onions
1-2 chopped tomatoes
1 tsp coriander powder
1 tsp Garam Masala Powder
1tsp cumin
1tsp Coriander Powder
1tsp Red Chili Powder
Method:-
- For Steaming, take urad dal and chana dal. Add salt, 1tsp red chili powder, ½ tsp turmeric powder, 2½ tsp coriander powder, 2-3 bay leaves, 1tsp mustard oil for flavoring, ½ crushed Ginger, 6-7 cloves of crushed garlic.
- For Tempering, take 2-3 tbsp mustard oil, 1tsp cumin, 2 dry red chilies, 2-3 crushed green chilies, ½ crushed ginger, 6-7cloves of crushed garlic, 2-3 chopped onions, 2chopped tomatoes, dry masalas, deggi chili powder, 1tsp turmeric powder, 1tsp coriander powder, ½ tsp salt, garam masala powder.
Now mix the dal and tempering, and allow it to cook for a while.
Now for the final tempering, add 1tsp cumin, 1tsp coriander powder, 1tsp red chili powder, 1pinch of ajwain powder.
Serve in a plate and pour that final tempering on the top of it.

Hi Chef - thanks for sharing healthy and wholesome dish. One question: Why should we use ginger garlic twice (while boiling and in tadka). Does it create additional layers of flavor and is there science behind it?

The science is that this dal boils for a long time and has a peculiar flavour but when u boil it ginger garlic paste starts to give out a beautiful flavour . Also when u cook ginger garlic towards the end it gives another dimension to the flavour
