Lamb Saddle Steak
Nick Mellin talks us through the cut of the month, lamb saddle steak. R' saddle of lamb is a cut that consists of the backbone and both loins, the most tender chop on the lamb, its perfect grilled or broiled.
All our lamb is sourced locally from the surrounding hills of Pendle and the lambs are left out with their mothers for at least 6 months allowing them to grow at a relaxed pace.

watching this video made me go to my local butcher, show him the video. and him cutting the meat out for me , then take it home and cook it for the first time ....... so thank you for this experience

Wow! That was one of the best demonstrations of skill I have ever seen. Just finished cutting up my first whole goat. I didn't do too bad (actually pretty good), but I wish I had seen this video before starting, ;-).

It looks very well made (no rubbery skin, no excess fat, no thick ligaments), unlike the 'crap' that I bought a month or so ago.

If I had to hazard a guess, much of the "waste" would make excellent ground lamb. I've had excellent results grilling ground lamb patties over charcoal with a sauce of garlic, mint jelly, black pepper, and cayenne on the table as a condiment.
