You should try Jean May in Wai Chai. Chef Tiffany was the sous-chef at LPM before opening her own restaurant. She was responsible for all the appetizers there.

She lacks in-depth knowledge of food processing. Try watching "Perfect Continuous Eat" and you would appreciate the elegant description and knowledge of a true food connoisseur.
