Another pro for guided system is that they are great for people with disabilities, or injuries etc who may have issues with or the inability to sharpen freehand. Whether you are missing fingers, a hand, or an arm, have bad arthritis, RSI, range of motion issues, tremors/shaking (up to a point) and so on. If you can only sharpen for a few minutes at a time before needing a break a clamp system is great. You can even use that hot water softening plastic to mold a custom handle if you can't hold onto a smaller knob.

Yes that was actually in my notes and I somehow forgot to mention it in the video itself! Thanks for bringing that up!

That newer Hapstone rs with the magnet on top to hold the slider and how the slider goes through a tube to keep everything compact has been working so good for me . I like the compactness , the adjustability and over all build quality . What I like most is it is perfect for edc knives up to 9” blades and under a 1/4” thick at the clamp is it’s limitations . I just tried some Venev Ursa stones and they’re not too thin for me . I thought they might be . Maybe a video about the different grit ratings and microns because it confused me for a day until I studied the subject . Actually I wrote the approximate grit on the side of the stone to alleviate my confusion and get on with the sharpening 😂😂. I really do like the little Hapstone rs with the magnet/tube slide . The clamp could use longer screws is my only gripe . Both sides hold the angle 100% , within .10-.20 . I think both free hand and guided is a good skill to learn but I’ve had much more of an enjoyable experience with a fixed angle system than a cramped hand . 😮

Very good presentation. I'm committed to learning and developing the feel for freehand which, of course, means a lot of practice -- on my cheap knives. But once you get it, you own it. Also, the emulsions like Gunny Juice are pretty good for polished and mirror finishes. My equipment is pretty simple: two 8" x 3" Venev stones (240/400 & 800/1200) with 4 basswood strops (3-4 bucks a piece at your local Hobby Lobby) loaded with Gunny Juice in 6, 3, 1 and .5 microns. BTW, Scott Gunn creator of Gunny Juice recommends basswood for stropping and it works great.

Awesome! You appear really comfortable in front of the camera, but maybe it's easier when you're taking about something that you're passionate about. 😊 Great job!

Clamping video!!! There needs to be a good one but nooo… almost everybody used easy stright bevel and super flat clamping areas… clamping like a spyderco Paramilitary 2 is a paaaain! 😅

I’m 64 and have free hand sharpened for years. Several injuries on my right hand (dominant) prevent me from pinching the knife while sharpening. Ruixin sharpening system has many flaws. Ken Onion system produces convex edges, and I’ve learned to keep expensive knives away from power systems. TSPROF K03 produces excellent edges.

$50 work sharp works for me. Yes it may take a while but I’ve never been able to hold the angle on free hand well enough to match my worst work on a guided system. How hard is it to bring this tiny box camping lmao? Just sharpen 2 knives at home and bring a strop on your trip. If you are dulling knives that fast maybe you should learn how to use stones on the go but most people wouldn’t need to.

I’m trying to learn wood carving and of course sharpening. And yes, so far, using freehand I’m screwing up the edges more than sharpening.them. Thanks for this basic introduction.

The video kinda misses the point. Guided systems will always create a shoulder behind the bevel. A shoulder will catch food as the knife tries to cut through it. You can feel it like a speed bump in the cutting stroke.

I have never once had a guided system create anything but a bevel. If you are getting anything besides a clean consistent edge bevel with a guided system it’s likely user error.

Dennis, you need to learn how to use a/your guided system. You are dead wrong in every aspect with this statement.

I’ve had a full edge pro system years ago. Then I learned how to do it freehand and you can see it is clearly superior in kitchen applications. Keep telling yourself that a Guided system doesn’t produce a bevel and you will continue to have knives that will hesitate through food.

@@TheFilletingfish with all due respect I freehand sharpen 75-90 perfect of the time and use a guided system on certain occasions and I’ve never experienced what you are talking about. The edges seem to cut practically identical. I can get a finer edge when freehand and get hair whittling edges, but in terms of using a knife in the kitchen or in general edc use I’ve never seen any real difference
