For Christmas I received the KitchenAid pasta press. I thought it would be great fun to open the package and proceed to make my first batch of macaroni, rigatoni, fusilli, and spaghetti as a video for everyone to see.
I am amazed at this KitchenAid accessory that comes with six different pasta presses. It is very easy to use. There is a handy cutter attached so you can efficiently make your pasta any desired length. Clean up is easy if you let the dough dry first and then use the nifty metal tool that comes with the press.
Be sure to view my next video where I turn this fresh pasta into cavitini, a pepperoni and ground beef casserole every family is sure to love.
You can use this fresh pasta in any recipe by substituting it for purchased dry pasta.
Basic Egg Noodle Pasta recipe from KitchenAid:
Four large eggs
3 1/2 cups sifted all-purpose flour
1 teaspoon salt
Water added to the eggs to equal 7/8 cup
Break the eggs into a glass measuring cup. Add enough water to equal 7/8 cup. Place flour and salt in stand mixer bowl. Attach the flat beater. Turn to Speed 2 and gradually add the eggs and water. Mix for 30 seconds. Stop the mixer and exchange the flat beater for the dough hook. Turn the mixer to Speed 2 and knead for two minutes.
Let the dough rest for 20 minutes. Hand knead until the deal is smooth, pliable and holds together in a ball.
Attach the KitchenAid pasta press to the KitchenAid stand mixer. Select the pasta plate to match the type of macaroni you would like to make. Form golf ball or walnut sized pieces of dough and place them into the housing unit that has been attached to the KitchenAid stand mixer. See the instruction booklet for the recommended mixer speed as it varies for the different pasta types.
Cook fresh pasta for 2-5 minutes, depending on the thickness of the noodles.

    I use to make pasta with the big pasta maker machine and it was really fun. I like this. It would be nice if they come out with more dies.

    You could set a small fan on side and it would help dry pasta as it comes out of machine then put pasta on floured pan off to the side. Regular pasta machines have a fan built in that works well.

    Yes, Russell did give it to me. I used it again today to make Pepper Jack Mac and Cheese using the fusilli noodles. I used 2/3 of the noodles in the recipe, and now I"m drying the other 1/3 to save for another day.

    J S It is really great! I like my old roller attachment for lasagna or fettuccine, but it’s nice to be able to make macaroni and other small short pasta.

    Each machine makes a different diameter spaghetti noodle. My wonderful hand-crank machine makes it almost as fine as angel hair while the pasta maker and the pasta press each make a different diameter as well. It's rather fun to have a choice of three different sizes.

    Shaped or extruded pasta should be a semolina and water dough. Sheet pasta and long cut strands should be a 00 flour and egg dough.

    I was just reading about 00 flour last week. I have never used it, but plan to get some for myself. I came across this type of flour when reading about some pizza crust recipe comparisons.

    If you make all the balls then sit down you can see the pasta better and cut in same lenghts

    Handy Tip for next time, when you cut the pasta you don't have to keep moving the blade back to the front each time. Saves the small pieces you cut each time you did that ☺️

    I cook the noodles then dehydrate them then they cook faster and one can add to recipes. Also backpack.

    I would agree that it is a slow process. The pasta taste great, but it’s much slower than the rollers for noodles using the KitchenAide mixer.
