Kevin's Famous Chili, The Office
Тәжірибелік нұсқаулар және стиль
Ingredients
4 dried ancho chiles
2 Tbs neutral oil (vegetable, canola or grapeseed)
3 lbs ground beef (80/20 or 85/15 lean)
2 medium yellow onions, finely chopped
6 cloves garlic
1 large jalapeño, finely chopped
1 Tbs dried oregano
2 tsp ground cumin
¼ tsp cayenne pepper
2 Tbs tomato paste
2 12 oz. bottles of beer (lager or pale ale)
3 cans Pinto beans, drained and rinsed
3 cups beef stock
2 ½ cups chopped ripe tomatoes
2 Tbs kosher salt
Chopped scallions, shredded Jack cheese and sour cream for topping
Directions
Tear ancho chiles into pieces, discarding seeds and stems. In a large heavy pot or Dutch oven, toast chiles over medium-high, stirring occasionally until very fragrant, 3 to 4 minutes. Transfer toasted ancho chiles to a food processor or spice mill and process until very finely ground. Set aside.
Add oil to pot and heat over medium-high. Add ground beef and cook, stirring occasionally to break beef into small pieces, until well browned (about 6 minutes). Using a slotted spoon, transfer beef to a plate and set aside.
Add onion to pot and cook briefly over medium-high until barely softened, about 2 minutes. The secret is to undercook the onions.
Using a garlic press, press garlic directly into the pot, 1 clove at a time. Then stir in jalapeños, oregano, cumin, ancho powder, cayenne pepper and tomato paste. Stir and cook until fragrant, about 2 minutes. Add beer and continue to cook, stirring and scraping the pan, about 7 minutes.
Meanwhile, put beans in a large bowl and mash briefly with a potato masher until broken up but not fully mashed.
Add mashed beans, stock, tomatoes, salt, and cooked beef to pot. Cover and bring to a simmer. Reduce heat to low to maintain simmer and cook 2 hours so everything gets to know each other in the pot. Remove from heat, uncover and let stand at least 1 hour (can also be refrigerated 8 hours or overnight).
Reheat gently, taste and add more salt if necessary, and serve with your favorite toppings. We recommend chopped scallions, shredded Jack cheese and sour cream.
Great recipe! 10 times better on the next day!!!

Albert, you won't believe this, but I made chili with Kevin a few months ago. He's as much of a pro as he looks. Posting in a couple weeks.

Hmm...I'm pretty sure that is just a mortar, from a mortar and pestle set. It's like was first used in quite ancient times, sure, but it is not something that has ever stopped being a common item is most cultures. I have two or three myself.

The most famous chili recipe that I know 👍
Hi! You posted ten seconds ago, so I’m your first like, comment, and view! Keep up the good work and outstanding content. I have learned a lot from this channel!
THAT LOOKS BADASS 👌
Omffggggg.. I got so excited as soon as I saw the video🤩🤩🤩
I don’t even like chili and seeing this made me have the urge for some.
Been waiting for this
That "beep" sounds exactly like my alarm clock, all "beeps" make my heart jump a little but especially ones that sound like my alarm clock. Every week day I'm suddenly startled awake at 5:30 am by "beep beep beep" and if I don't hear it, it gets faster and louder and the worst part is there's something outside my home that makes that exact same noise at all hours of the night and makes it hard for me to sleep 😭. Anyway, aside from my venting, nice chili 👍
the smile and thumbs up at the end is the only best buy
This Chad took it to the next level of food😃
Выглядит вкусно, хотел скушать такого
I tought he was gonna recreat the scene when he dropped it😅
His expressions were alot more first emotionless next suprised after that a big 😊😊
while watching this all that went on in my head was " WELCOME TO CHILLI'S "
Finally that smile 😃😃😃😃😃

Imagine if hed dropped the chilli and proceeded by eating it from the ground
I’m impressed no one still haven’t talked about the spice after the oregano - _”you’ve made me proud my student”_ - mister oogwgay
Perfect
I half expected him to finish the chili then immediately drop it on the floor instead of tasting it.
Amazing
You forgot the most important step: spilling it on the floor for seasoning
I’m so sold on that tomato
Good work

Delicious looking as always but have to subtract points for not spilling some and trying to scoop it back into the bowl
