Keto Poori or Bhatura | Keto Vegetarian Recipe | Keto Snacks

This Keto Poori or Keto Bhatura is an exciting step for me. I don't make many deep fried foods as it wastes a lot of oil. But nevertheless, I love eating it when someone makes it for me. Chole(chicpea curry) and Bhature(deep fried flour bread which puffs up) is a fovorite of mine and a very popular dish. Here I am sharing the recipe of Keto Bhature or poori. It tasted great along with my version of Keto Chole, which I will sharing soon.
I want to quickly point out the difference between Bhature and Poori. Bhature is a deep fried bread made from refined flour and the dough is mixed in yogurt to give it a slight sourness or fermentation. Poori is a similar deep fried bread made using whole wheat flour and there is no ferementation involved. They both puff up but Bhature are much larger and many a times the restaurant making large bhaturas is known due to this. It makes a great statement. While Bhature can be even 1 foot in diameter, pooris are smaller and about 4 inches or so. Pooris are considered healthier as they are made from whole wheat. But our keto poori is even better. It is low carb, gluten free and hence, gulit free.

    I tried this today and followed the exact recipe, and it came out sooooo good!!..I could never get non-keto Puri's go puff , but these puffed up almost instantly. It tastes almost as authentic as real Puri's!!.. If you fry it well enough then it's really crispy and can even be eaten as a snack!. Love this!! Thankyou soo much sonal! ❤️ You are a genius to come up with some authentic delicious keto recipes!!

    I tried this recipe on two consecutive days. The second day, everything turned out excellent including the first Batura puffing without sacrificing 😀. The key is to heat the oil to a temperature Batura turns golden brown, it’s crispy and tastes way better. If it’s whitish, you need to increase the flame,

    Sorry I did not record that. But let me say this. They are not crunchy but maybe flaky is the word. I dont have the right word for it in English. They are almost like that a poori is when freshly fried.

    I dont think that it will work that well in this recipe. Maybe you can try with only flaxseed flour. I have not tried.

    no you cant. The gum will hold it together. It is cheap and available online. I have a link in the description.

    Yes you can as all fats are carb free and will keep you in ketosis. But it is not advisable as a healthy keto fat.

    Sonal, thank you - loved these puris! I tried using your dosa tip of adding greek yoghurt to the dough to get the fermented taste for bhatura, but no luck :( Well no bhatura just yet, but these work great as keto puris :)

    I don't like using xanthan gum. Does flaxseed powder work as replacement? Psyllium husk doesn't work at all? I know you mentioned it in video but just want to know if you tried with it so I can avoid wasting the dough 😊

    In this recipe you will not feel the xanthan gum. Psyllium will work but give a lightly different result.

    Sorry to hear that. Is the xanthan gum good? Can you try another brand and with a little more qty. Also the coconut flour has to be coconut flour. The fine quality. sometimes they sell almost desiccated coconut under the name of flour.

    It is not very oily but definitely y will add calories. On keto we dont really count calories so once in a way is fine.

    4 days in the fridge. But they will taste best when fresh.

    Hi Sonal, thanks for sharing this recipe. I followed the exact same steps but my pooris didn’t puff up. Also, I wanted to check with you whether your silicone baking mats are perforated or not? Because when I ordered from Amazon, they came perforated. Problem is when you roll the keto dough on perforated mat, the dough comes out of the holes and make the kitchen slab and rolling pin messy.

    Oh. My mats are not perforated. To have the pooris puff up, try rolling them slightly thicker just like we would with regular pooris

    @@SonalsFood The link in your description takes me to Amazon baking mat (which I already ordered and is perforated) and its not the same mat you are using in the video. Your video shows some Utopia kitchen mat, which I didn’t find in Amazon.

    You can fry in ghee..yumm. psyllium husk will not give you puffed pooris

    @@SonalsFood I am a sports nutritionist..I won't reccomend you to fry with peanut oil..its unhealthy especially when you are applying too much heat..ghee is the best oil to deep fry something.

    No dear gelatine does not hold when hot. it has to be refridgerted.

    Preferably in coconut oil. But sometimes peanut. It's not ideal though but once in a way is fine.

    Sorry to heat that. Try again by making them a little thicker. Just like our wheat flour ones, if you roll them too thin they dont puff up.

    Yes why not. It's just that I avoid reusing deep frying oil. And coconut oil gets wasted then

    Keto is a very low carb diet mainly. And clean keto is where you eat ghee coconut oil and animal fats. But eating some coconut oil once in a way is not going to kick out of ketosis.

    Yes. It's a high fat low carb diet. As long as you use healthy oil and fats.

    Sonal, can I use low carb flour from Amazon? I am using low carb flour, coconut flour, almond flour and flax seed flour 11/2:1:1:1/2 ratio for making roti. Is is advisable?

    All the Flours are keto. But I am not sure if it puffs up well. I intend to try this recipe with some flax seed flour but still haven't. Let me know if you do.

    You can use coconut oil or olive oil. Sometimes I use peanut oil.

    Yes, true. That is why I avoid. I prefer not to reuse. So I use a really small wok. Reusing oil may be bad as it turns rancid.

    It is keto. Bhatoora and poori are made from wheat. So technically this will not qualify as poori either, But on keto we try to find substitutes. This is that.
