Japan isn't famous for its cheese but this cheese maker in Hiruzen (Okayama Prefecture) has been making his own cheese for years. Meet Kawai-san. He started when he couldn't find the cheese he wanted to eat in Japan. His passion took him all over the world, to Europe and the US - and beyond. He also has his own Jersey Milk cows, everything done in the same place. We'll look inside the dairy farm and try some of his best cheese creations.

    @@tygrahof9268 Jersey is in the UK I believe. They may have come from the US though -- or Kawai-san's cows bred in Hiruzen and bought here hmm - I'll have to go back to find out.

    Jersey cows are a great choice for a small farm. They are not as large as Holsteins, your usual black and white cow, so not as hard on infrastructure. They are also fairly smart and like a routine. Best of all, their milk is way way higher in milk fat than Holstein milk! Ya, I grew up on a dairy farm, and the neighbours had Jersey cows 😆

    I am glad to see this. I am a Cheese monger in New Jersey (USA) and when I was a judge of the World Cheese Awards in Wales this past year, I ran into the Japan Cheese team and learned all about Japan Cheese. I was in Japan two weeks ago and I was surprised to see the great Growth of Japanese Cheeses. I can't wait to come back and learn about more Japan made cheeses my next trip! Great Episode!!

    Hi John. Another great food video. I did not know it was difficult to buy cheese in Japan. Living in the UK, there is an abundance of great cheeses. The gentleman seems so passionate about the cheeses he makes and rightly so.

    I say Kawai-san is the cheese head of Japan. I'm currently living in an area that's surrounded by dairy farms. Honestly not the best place to live when it smells like cows on occasion. If I ever plan a visit Hiruzen. I would love to try some of the cheeses that he makes.

    Tourists to Japan need to be very careful and aware of quarantine requirements or enhanced Customs procedures when returning home or proceeding to their next destination country after visiting a farm, and a dairy farm in particular. This is no joke particularly returning to Australia and NZ.

    Jersey cow have the highest milk fat of all breeds of cows. They also have the lowest yield, so their products are the most expensive. Nice to see Dean again--my wife has a crush on him!

    2:38 I think I understand what he's saying, like cheese in the west is used as a creamy/fatty/funky/salty/sharp/etc flavor. But in Japanese cuisine, those flavors are already covered by the wide range of fermented foods. So the introduction of Western cheese to Japan was kind of introducing an unfamiliar yet redundant ingredient.

    No there was definitely more fermented food in Europe than just cheese lol, beer, bread, wine, pickles, sauerkraut, yogurt, dried sausages, etc

    Cheese actually is something I am always missing in Japan especially my old gouda which I usually eat a lot .... at least we can find young gouda sometimes. That Mouldy cheese looks so bad ... I still don't get how someone can eat it even if its edible mould it looks so disgusting.
