    What Jamie said about cooking being like therapy really hit home. I've recently discovered a love for cooking after previously seeing it as a bit of a chore, even though I could technically do it. I like my looooong recipes and find the whole process incredibly therapeutic.

    I actually made it tonight. I tried beef cheeks once before for another recipe and it was so tough that I was a bit reluctant. I also tried another beef Bourguignon recipe recently and the texture of the expensive prime chuck I used turned out stringy. My son bought Jamie Oliver cook books when he first learned to cook. Yeah, I cringed and laughed at his chili jam fried rice too. But tonight’s dinner was delicious. The beef cheeks chunks were tender, melt in the mouth yum. I will definitely make it again. I would like to add a little salt but do not know when. Jamie explained not to add when marinading. Can it be added while braising in the oven or should I add after I take it out of the oven? Thank you for a great recipe.

    There’s no boundaries in most of the recipes. You can make original recipes without perverting them and calling whatever you ended up with “my expression”.

    Nice to see Jamie again cooking. Been a rough few years for him and everyone in the industry. If anyones interested the veg cut is called Mirepoix. Standard cut for stews, stocks and cassarols. Carrots, celery, onion. Good vid for those cold days. Comfort food.
