It's Fall and that can only mean one thing - soup season! If you are looking for the fast track to cozy cooking, try Jacques Pepin's instant potato leek soup recipe. Jacques shares some great tips on how to prep and cook leeks, but you can always substitue for scallions if you don't have one on hand.
What you'll need:
1 qt. chicken stock, 1 leek, 1 - 1.5 cups potato flakes, salt and pepper, tabasco, 1/3 cup heavy cream, chives

Made this a few times. The potato flake trick is great. Leeks are pretty expensive here (I wish they were $1 USD each) so a few big onions is a decent replacement. A small amount of milk does fine as well and usually have that in the fridge instead of needing to buy cream.

Ditto, here in Oz they can be three times that much. But instant potato flakes? What an inspiration! Following Chef, I'm now using potato starch to thicken my Roast Chicken Gravy... 😉

I like how he mentions leeks can be $1 per, when he's worth MILLIONS of dollars. Reflects his humble beginning. Waste not, want not.
Dude even after a stroke this man is still in the kitchen recording content, making amazing delicious food and spreading his home cooking wisdom with a generation VERY GLAD to receive such wisdom. God Bless you Monsieur . Pépin!!! You are an inspiring man!

His stroke was very mild. Complete recovery.
He’s one of the few who ‘give us permission’ to use the green part of the leek. He really is a first rate chef/cook.
If Jacqes uses instant potatoes, so will I!
Mr. Pepin cooks like I want to eat. Watched and enjoyed his shows for many years. An inspiration.
Who knew... Chives have pretty purple flowers.
Jacques, I've watched you cooking for over thirty years. I've always been a fan, even when you had a half hour show that aired on Saturday mornings in my area back in the 80s. I first had Leek soup while on a tour in England. We were in a little town close to Wordworths cottage and I stopped for lunch in a little Cafe. I tried your recipe and I love it, even my grandson loved it, he's 23. I'll make this often. I love how you make delicious meals with little or no effort. Simple, not hard or complicated. I was scrambling my brain tonight trying to think of something for dinner, my fridge is bare! Well, I remembered this video and I just happened to have some soup base and half a packet of instant mashed potatoes! No leek or onion, but I had some dried onion and leftover ham, so I threw it all together, finished it with a knob of butter in lieu of cream, and it was rich, filling, and delicious enough to satisfy even my hard to please girlfriend 😁 Thank you for dinner, Chef Jacques!

Grew up watching him cook, always simple and elegant, like a 2nd grandpa to me.
I realized that this recipe video is like a recap for those new people who discovered Jauques Pepin! I just already watched the Potato Leek soup from his More Fast Food My Way episodes and now I watched this version too. Although I don't have instant mashed potatoes but I can use fresh potatoes that are diced and I'm good to go.

I don't know what his training is but being a chef for over 30 year's I always used real potatoes when making potato leek soup.

@@jaggerzzchef Pépin is a legend in the cullinary world. He's one of the first TV-chef's and he made "Brunch" famous worldwide with the Howard Johnson's hotels. His background is the classical french cooking school.

Stock or reconstituted chicken base, leeks/scallions/onions, potato flakes, salt, pepper, and cream or milk - nice! Quick to throw together and must be quite tasty too.

Jacques is so relaxing to listen to and a master in the kitchen. Not like todays so called "chefs" on cooking shows who have to use gimmicks to get the viewers attention. I cant stand these "chefs" who have cooking game shows. Does anyone know when these videos of Jacques were recorded? He sometimes mentions his late wife. Thanks.
Excellent - The only time I use potato flakes is for a quick soup or to thicken a chowder.

As usual from the Chef, it's simple and delicious. I subbed Tarragon for the chives, and added water to thin it out a little and used an immersion blender to smooth it out. But those are the only differences. As usual, with over 30 years of doing his recipes, Chef Jacques rocks! 🥲🤘

i was thinking about a leek and potato soup so this is great. never thought to use instant potatoes. i think i will add some diced potatoes. great job.. love your recipes

Tried it tonight and loved it. I had 3 leeks, 2 Yukon + 1 Russet. Cooked potatoes 15 minutes, mashed a bit, added leeks, potato flakes as directed and omitted the cream (not necessary). Potatoes added a good base and flakes made it rich and creamy and smooth. Sprinkled a few raw leek slices on top & voila! 👍👏

I didn’t have regular instant mashed potatoes but luckily found one with sour cream and chives in my pantry. Can’t wait to grow chives this spring!

Thank you for thus inspirational recipe. I added 3 potatoes (2 Yukon Gold, 1 Russet) and used 3 leeks. Potato flakes are a genius add. 20 minute dinner for 2 and leftovers: Deeelicious!

Love leeks
Love how he takes herbs that are ready to “go to seed” and uses the flowers. (Thyme flowers are exquisite or try sticking an old bulb of garlic in the ground: garlic chives!) Decorative and tasty…if an herb is edible so are the flowers!
I made this today and it is sooo yummy...very easy and very quick! I just wish leeks were $1 like he said instead of the $5 I had to pay! But, it was still an inexpensive soup.

I bought leeks specifically to make this soup. Thanks for posting a different alternative to Chef Pépin's original recipe. I was going to use the one from his book. Also, I didn't know I could use the dark parts of the leek. I've been tossing them. I'll include them in my soups from now on. Thanks, Chef Pépin.

We always use the green leek tops ( I grow leeks and once you grow them or any other vegetable, you always use everything that’s edible), just like green scallion tops.

@@janking2762 Thank you for your input. I didn't know, until watching this video, that the green part of leeks were edible. Can you stir-fry them? I use all of my scallions in cooking.

@@dee_dee_place Yep, you can stir-fry them as well. I always cut off about 2 inches of the very tops, but still use most of the dark green.

Love potato leek soup!!! Going to try this with some oat milk and veggie stock as I have a family history of Cancer so need to avoid the estrogen in dairy and Lead (Pb) in meat/bone broths. Thanks for posting

I love this recipe, so easy and delicious. Sometimes I add some chopped clams and one potato peeled and cut into small pieces with chives, thyme, salt and pepper of course. C'est bon!

I can't believe I never thought of using potato flakes before. What used to be a tedious chore is now a quick and easy soup to make. I prefer to sauté my leeks and scallions in butter first, then add chicken stock. I find 8 cups of stock with 2 cups of potato flakes works best.

This is the first recipe I've seen that use the dark green leaves of a leek.
Looks delicious. A couple of croutons maybe?
Are potato flakes like instant potatoes? Also I think substituting coconut or oat milk can make it vegan without losing flavor.

I was stumped on potato flakes, too. Yes. Use instant or dried flaked potatoes. I made this tonight and added some chopped potatoes as well as the flakes. Dairy not necessary as creamy and smooth alone. Good basic comfort meal. 20 minutes of stove time. Yum!
Interesting, I've been making this soup for 15 years. I would always cut about 2" above the lighter part. I'm going to keep more next time!
I put a leek in water and it grew roots, now it's in a pot outside.
I just made and didn’t turn out as nicely as I would have liked. I think the issue was the broth that I used I use better than bouillon and I think I’m going to stop because it’s terribly salty and actually doesn’t have a very nice flavor. It is vegan but vegetable broth should always be vegan. I’m going to try to make my own broth and I’m also going to change the potatoes that I use. I will look specifically for potato flakes. The other option is that I have some frozen mashed potatoes that I had made at another time and I am thinking those might work also, I used vegan heavy cream and I think the taste was just fine but I also think a good solid, creamy oat milk would be nice too
