Pizza Dough
5 lbs Bread Flour (High Gluten)
1 Package Active Dry Yeast (1/4 oz)
2 Tbsp Salt
8 cups warm Water (105-110 degrees F)
Vegetable Shortening (to grease pan)
Pizza Sauce
2 qts Peeled Tomatoes
½ chopped Onion
2 cloves Garlic
2 tsp Oregano (approx.)
Fresh Basil
Salt & Pepper to taste
Pizza Topping:
Sprinkle grated Pecorino Romano Cheese
Sprinkle Oregano
Drizzle Olive Oil
Then if desired, add Mozzarella, Sausage, Mushrooms, Pepperoni or anything else you like!

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    I cannot believe that people actually gave this video a thumbs down and some left negative comments. Why can’t you just enjoy the fact that she is as sweet as apple 🍎 pie. I love her because she reminds me of my grandmother who is no longer with us. People should cherish grandmothers like Nonna Gina, because they are rare. Please be kind and respectful to her.

    Well said. I watch her and it's like watching my late dear mother who put her heart and soul into her food. The only thing Italian mom wants is to make sure you eat good. We never went to restaurants because we always got better food at home thanks to women like this.

    I’m not Italian, I’m Indian and I’m not Catholic, but I LOVE that she blessed the dough… that’s what makes food from grandmothers taste so comforting, their love and prayers are in the food. ❤

    Grandma, I’m a 73 yr. old great grandma and I have to say, you inspire me with your Italian cooking!! I’m not Italian but people think I am because I love everything Italian! I grew up with two Italian families, the Mariano’s and the Vasterelli’s. You remind me so much of them and I love your accent, your expressions with your hands and watching your videos. Thank you for sharing your recipes with all of us. (My sauce is almost identical as yours except I add sugar and wine as this is the way my Italian families did it.)     The “sign of the cross” works universally on many things. Nana would use her finger nail and place a cross on my mosquito bite bumps as a little boy. Some how it always worked!👍🏼🙏

    The sweetest thing about this whole video is at 33:30 when she finally takes a bite and you watch her face change from the grandma making the pizza into the little girl eating her grandma’s pizza years ago. *This* is why I watch KZread.

    This video made me homesick in a big way. In my mothers hometown, in Italy, my grandmother didn't have a stove so she would shape the loaves of homemade bread and bring them to the communal oven. I know it sounds outdated, but something about this makes my heart hurt and I feel we have lost something socially that I just can't put into words. My mother would bless the rising dough by doing the sign of the cross in the same way when she made "pizza bianca", white pizza, just garlic and rosemary on top. Now it's my turn to keep the tradition alive. Che Dio ti Benedica. Great video.

    I just watched her for the first time today. Fabulous. I got a real kick out of her description of making a little pizza "only five pounds of flour instead of twenty five. I make home made pizza using four cups of flour." The laughs on me. So enjoyed her show.

    This video is a gem. Gina's personality is so lovely. Her homemade canned tomatoes, along with all the other ingredients, shows that pizza is a phenomenal creation that can be taken in any direction you want. Too bad this video does not have smell-o-vision. God Bless you Gina.

    I am a 52 year old Canadian male. I grew up in a Northern logging town. Both my parents worked and I had an Italian baby sitter. My mom would drop me off and pick me up after she finished teaching. Her name was Auntie Anna...I have fond memories of her and Uncle Tony. She would make me home made pizza, pasta, etc. As I look back now, I miss all the accents I grew up with, Italian, Serbo-Croatian, German, Dutch, etc. I miss the food, and most of all, my Aunties who used to look after me, and feed me. Thank you for bringing back some wonderful memories.

    I gave Gina a thumbs up & if I were able to I’d have given her 2 thumbs up. She showed us how to cut up basil with a scissor, how to open the canning jars with a bottle opener & how to make dough rise by covering it on the couch with blankets. When I watched Gina do those things alone I thought why didn’t I think of doing that stuff? I love Gina & her recipes, even though I live alone & she cooks up enough food to feed a small army, Gina totally rocks!

    Is this pizza what many pizzerias call "Grandma's Pizza"? There was a wonderful restaurant owned by 2 Italian brothers from Long Island who had the best pizza I have ever eaten--and it was called "Grandma's Pizza". It was made in the same rectangular shape, and did not have meat or vegetables--just tomatos and cheese with some spices and garlic. This looks wonderful! Thank you!

    Hi Ms. Gina. I wanted to thank you for this beautiful video. I lost my grandma when I was 19 and she was one in a million! You remind me so much of her, and I cry and smile watching you make this beautiful pizza because it’s something her and I used to do quite often together as well as making homemade pasta. Her gravy was the best thing I’ve ever tasted in my life.     It took me 15 years to figure out how to make pizza. Nona Gina makes it look so delicious and not too difficult to make. It really takes skill to bake pizza in such a relaxed manner too.

    These videos are not about recipes. They are about family. All four of my grandparents came from Italy. It is apparent that this grandmother is adored by her family, as it should be. I congratulate Gina not on making pizza but on making her family. I am sure Gina takes little pride in her pizza but great pride in her family. To her family: be proud, the love you show for her, shines through these videos. That type of love is more Italian than American but is certainly not exclusive to Italians. That love and respect may not be noticed by all viewers but it is certainly noticed by some. May God continue to bless you all.

    I know sometimes we can not speak her language but.... I Just Lovea to watcha her...…. Not making a joke of her..... I personally would LOVE to eat her food.... I have a lot or respect for her!!!!!!!!!!!!! Today no one respects or appreciates the elderly cooking.....     thats absolutely not true... the stats show that right now more people are cooking at home and learning to cook than at any point in the last 50 years. The pandemic shot rates of home cooking up and millions of younger americans learned to cook.. all my children do. The rates shot up to 75 percent of all households cooking at home for more days of the week than eating out.. and post pandemic that has hovered around 71 percent in 2022, not sure this year yet but its likely around the same. Just look how popular cooking channels are on youtube, you think millions are just watching 30 minute videos on DYI recipes for fun?? hahaha nope.
