I loved this video, I loved how everything was freshly prepared and that Lasagna sure tastes great!
This video shows how even outdoor, wherever you are you can make an excellent lasagna! The technique used to make this lasagna is extraordinary, even if it's not the real Lasagna Bolognese, as they claim, but it doesn't really matter!

    You are lucky because you have never seen Rachael Ray cook Italian food. She's got no Michelin stars though, but she is known for distorting traditional recipes from other countries. She did it to the Mexican Pozole and Vietnamese Pho. God forbid she does the same with an Italian dish (and she's partially of Italian descent, but still).

    I think the misconception about Michelin star chefs is that only they can serve the best tasting food. Which is wrong. Michelin star restaurants are about the experience. They earn the stars through a combination of food quality, service, wine and ambience. Not solely by the taste of their food alone 😊.

    Systems like the Michelin stars were created to give people a sense of importance, and is grading People based on a system that has already been pre-determined

    The reason for adding the sofrito after the meat is due to the extremely high temperature of the skillet. If it was cooked before the meat, the sofrito would burn before the meat was ready. Love your videos! Keep up the good work.

    That's also the point why they use sunflower oil. Simply to raise the smoke point of the olive oil. Otherwise it'll burn.

    @@subsounddistortion this... Vincenzo insists in the "Extravargeenolivoil" as if it is be all, end all.... olive oil is best used raw... when you cook it, it is inferior in every way to most high temperature oils....

    Im a subscriber of country life in Azerbaijan too and love all this ladies cooking and preserving,the farm looks wonderful more now with all the beautiful flowers in summer in pots and all the animals,her sweets and cakes are wonderful too❤ 🙂 I love it

    I think they are using sunflower oil, because they cook on real fire. Sunflower oil has higher smoking point than not rafined olive oil (like extra virgin), so they minimalize chance of burning oil. :)

    smoking point means nothing and EVOO is the most stable oil other than animal fat

    @@jamiehayn Im sorry but i cant let you say that its not the most stable oil and it burn in high temp (405 F Max ) thats why they use sunflower oil (450 F ).

    I guess there is no extra virgin olive oil in Azerbaijan or is too difficult to find there. Nonetheless, their final product is a work of beauty and it made me hungry.🤤

    They use a lot of local olive oil on this vlog--but also use the local cold-pressed sunflower oil for some applications

    Azerbaidzan used to be in the soviet union, and they are nuts about sunflower seeds, and therefore it's also the most used oil. And by the way the pan is so darn hot EVOO would burn ,EVOOs smoke point is between 160-207° C where as Sunflower oil is between 227-254°C

    This is my favourite food vlog--Country Life Vlog--this family is amazing and the food is terrific (we have been making it on an open fire here in Canada following Aziza's example for over a year now). I'm glad you only faulted her for the sunflower oil (which is cold-pressed and very flavourful in Azerbaijan) and cheese (and considering that the earliest known medieval recipe for lasagna is English and is only pasta sheets and cheese...)

    Hey Vincenzo. Beautiful Video you found there. And I also need to cover them in one point. They use sunflower oil for the meat because of the not so controlled heat of the fire. Extra Virgin olive oil, no matter how good it is, will start smoke a lot earlier then sunflower oil. So they mix it to raise the smoke point just in case. That's also the reason why the butter doesn't burn when tossed to hot pan where the steak has been seared. The oils are Mixing.

    smoke point does not mean anything and if theres food in the pan it would have to burn before the oil reaches smoke point again. extra virgin olive oil is the most stable oil for cooking. i would suspect they only reason they used the sunflower oil is that it is a local ingredient.

    A little out of the traditional order but done out in the open in as rustic a setting as can be imagined! The same spirit behind the traditional Italian dish is still here, just modified a bit by regional necessities and realities. That cleaver is something to behold.

    All I have to say is when an elderly couple cooks something this amazing on a steel plate over open fire with coals on top to bake it you don't even try to correct them. These people have forgotten more about food than you will ever learn.

    I love to see this, too! Which prompts the question, do you ever make something so unexpectedly delicious that you cry at the first bite...maybe even while cooking it? One additional comment, I don't understand people who don't touch their ingredients while cooking. How else can you get all of the love into it!?

    You should leave Sydney and move to the countryside. I left Chicago for the suburbs, then left those hectic holes for rural Wisconsin and life is wonderful. I also cook outside year round, even when it's snowing. The convenience of urban and suburban living is nice, but the benefits of a peaceful life devoid of turds always in your face and constant noise and traffic are immeasurable.

    Yes I completely understand and agree. We are working on moving out of the city. Life outside the city is great, more peaceful and probably healthier. Thanks for sharing your story

    I would have to agree. I recently made the decision to permanently move from London to rural Wales and it's done nothing but wonders for my mental health. I don't regret it one bit! For me, living in the city was exhausting for many different reasons. The pollution, the noise, the overpopulation, light pollution (I forgot how lovely it is to actually be able to see the stars at night!), Etc. Also, everyone seems miserable. I would often notice what seemed to be a general aura of stress and discontentment - people always chasing the next promotion, the next high, but never being satisfied. And for what? All that work in a horrible, grey smelly place, to pay a fortune for a crappy apartment? I just had to get out, and try and live a simpler, slower life.

    @@vincenzosplate depends there is very simple ones and very complicated ) but they are amazing , we don’t use spices, i mean besides salt ,pepper , Shafron, and turmeric. Check out Dolma . There is tons of Azerbaijani recipes on youtube , would be interesting to watch you make it.

    @@vincenzosplate why always the comparison with Michelin chefs? And why does a farmer cooks better? There are more chefs without a Michelin star then chefs who own one. Also there are tons of chefs who don’t care for a star or even returned their stars. I know a few in my country and that’s a very small ass country. 😊 I think it’s a misunderstanding that a Michelin chef, or any good chef, doesn’t have the same passion as a farmer for cooking food. A chef has devoted his life in cooking and creating food for other people. You cannot do that without passion. Chefs in general are also working on why they choose a certain meat, a certain method. They choose what in the end gives the best end result. It’s always such a sentimental thought: my mother cooks the best food. Why? It’s because of all the memories that are attached to it. And with that it’s the flavor you grew up with. I know for a certain that my mom’s Indonesian food is the food I like the most, however I’m not living in a dream to think she is a better chef then Hans van Wolde for example. I like the way you respect your heritage and you are on a mission that people don’t disrespect the real Italian food. Please do that. But don’t use the comparison between a farmer and a chef. Chefs are giving up their private life, their time and a lot more to feed people. That’s passion!
