Istanbul TRADITIONAL OTTOMAN FOOD! Michelin Recommended Matbah Restaurant in Sultanahmet-Old City!

Want to try authentic traditional Ottoman food? Located in Sultanahmet or Old City in Istanbul, Matbah Restaurant in Ottoman Hotel Imperial specializes in Ottoman Palace Cuisine.
In this Istanbul food vlog, Travelling Foodie Raymond Cua takes you behind-the-scenes with Matbah Restaurant Chef Kadir Yilmaz on the kitchen to see how the Kirde Kebab is made. He also presents the various Ottoman recipe cookbooks (like Fatih Devri Yemekleri for Fatih Food) used at this Michelin Recommended restaurant, which includes the very first cookbook about Ottoman cuisine.
I tried a variety of Ottoman food:
- Vişneli Yaprak Sarma / Stuffed Vine Leaves With Sour Cherries (1844) - Vine leaves stuffed with blend of sour cherries, rice, onions and pine nuts, cooked lightly in olive oil
- Humus / Hummus (1539) - Ground, Chickpeas with lemon juice cinnamon currants and pine nut
- Babaganus / Baba Ganoush (1469) - Baked peeled aubergine with garlic, olive oil and yoghurt
- Ballı Gemici Böreği / Sailor's Roll With Honey (15th c./yy) - Ottoman pastry with seven different Turkish cheeses and pea, wrapped in homemade filo, fried in olive oil, served with honey with currants
- Hassa Böreği / Hassa Pastry (1473) - Rolled pastry with walnut, green olive, yoghurt, tulum cheese and spices
- Nar Ekşili Çoban Salatası / Shepherd's Salad with Pomegranate Dressing - Pomegranate sour salad made with tomatoes, peppers, cucumbers and parsley
- Bostan Patlıcanında Reyhanlı Bıldırcın / Quail in Garden Eggplant with Basil Sauce (17th c./yy) - Quail prepared in garden eggplant with pepper paste, honey and olive oil, seasoned with fresh basil
- Beğendili Kuzu İncik / Lamb Shank with "Begendi" (1463) - Baked lamb shank & pureed eggplant
- Kirde Kebabı / Kirde Kebab (18th c./yy) - Roasted diced beef with vegetables served on lavash bread and side of yoghurt
- Bal Helvası / Honey Halva (15th c./yy) - Roasted flour halva with honey and pistachios
- Helatiye (15th c./yy) - Mastic pudding served with almonds, Antep peanuts, and seasonal fruits in rose water
- Baklava (14th c./yy) - Gaziantep dessert consisting of yufka, walnuts, butter and sugar. Soaked with a sweet syrup immediately after cooking to to penetrate all the layers
