Hmmm hmm. That does look good Nisha. I just made hummous tonight and I had some beets cooked in the fridge. Missed opportunity. Am very impressed you are cooking your chick peas. I only manage it around 50% of the time. Agree lemon zest lifts flavour intensity

Inspite of the accent I could tell it was indian probably because of the chana which I have not seen much in international cuisines 😅even though this is not an Indian dish. Looks pretty.

my beet hummus starts with roasting the beets with the garlic cloves in kosher salt and olive oil. Once the skin is off both after the roast, they have a more intense flavor. Yum.
