Lots of sun and rain, good soil and the warm Gulf Stream have made Ireland a botanical paradise. Thanks to the mildness of the climate, Ireland's famous cows spend almost the entire year out on the meadows. The Irish have started to do more with their milk - beyond making butter.
Tom and Giana Ferguson use the wonderful aromatic milk to make soft cheese the traditional way. Their Gubbeen cheese, named after the farm, have won many prizes.

The couple can hardly keep up with the demand for their aromatic soft cheese, favored by gourmets across Ireland and in continental Europe as well - and even the White House orders it! They are part of a gentle food revolution - and the revolutionaries are small farmers. Slow Food, authentic and local, makes perfect sense where nature is so generous.

The cows look very happy
Living in a high mountain valley in the Rocky mountains of Montana, in a very small farming town, 1500M in elevation( its supposed to frost Wednesday) where we can source our beef lamb poultry potatoes flours and veggies and some dairy, we all buy each other provender and support neighbors.....gosh I wish we had cheese makers still....it makes me think....I love the content on this channel
