Ireland’s OWN Barmbrack, also known as Crack cake, originates from Ireland and is traditionally associated with Halloween. The name "Barmbrack" comes from the Irish word "báirín breac," which means "speckled loaf," referring to the specks of dried fruit in the bread.
Historically, brack was made as a yeast-raised bread, distinct from the more common tea brack, which uses baking powder as a leavening agent. The yeast-raised version is believed to have originated from adding yeast ("barm") to the dough, hence the name.
Barmbrack is traditionally associated with Halloween (Samhain) in Ireland. Baking a barmbrack with various symbolic items, such as a ring, a coin, a piece of cloth, and a small stick, was customary. Each item had a specific meaning:
Ring: Signified that the finder would be married within the year.
Coin: Foretold wealth or good fortune.
Cloth: Indicated bad luck or poverty.
Stick: Predicted disputes or unhappy marriages.
The traditional recipe for barmbrack involves soaking dried fruits in tea, sometimes with added whiskey, to plump them up. The bread is lightly spiced and sweetened, with the soaked fruit folded into the dough.
While the yeast-raised version remains popular, many modern recipes use baking powder for convenience. Some variations also include glacé cherries or candied peel.
Barmbrack remains a popular treat in Ireland, particularly around Halloween, though it is enjoyed year-round. It is often served toasted with butter alongside a cup of tea.
Today, barmbrack is widely available in Irish bakeries and supermarkets, especially during Halloween.

Taking Cooking food back to basics.
Ingredients:
- 300g self-raising flour
- 5g baking powder
- 5g salt
- 5g mixed spice
- 120g light brown sugar
- 1 large free-range egg
- 1 - 2 tbsps Irish Whiskey optional
- 250g sultanas
- 250g raisins
- 300ml strong tea (for soaking the fruit overnight)
- 100ml strong tea (for making up the batter)
Mixed spice
1 tbsp cinnamon
1 tsp Nutmeg
1 tsp allspice
1 tsp ginger
1/2 tsp cloves
1/2 tsp coriander
tin dimensions of 9 inches by 4 inches by 3 inches
Preheat your oven to 160°C (320°F) Bake 1 hour 30 mins
Airfryer 140°C (280°F) Bake for 40 mins - then Bake covered for 25 mins - keep baking and checking until the skewer inserted is clean.

My dad would have loved this as he could never get enough raisins. My daughter doesn’t like them much despite her grandfather’s early influence. She likes grapes but raisins have always been suspect in her eyes. Leaves more for me!

When recipes call for raisins I usually substitute walnuts, but sometimes chopped dried apricots or dried cherries. No raisins here!

@@BackyardChef turned out great - used currants, sultanas and a little peel to make up the weight. Added some whiskey because I could. Baked in regular oven at 160º fan forced, took almost two hours.

People who say they hate fruit cake have never had a homemade one. I agree with them too. Those plastic wrapped ten ton supermarket abominations you see around Christmas time are horrible. This recipe is a good one. I agree, save the whiskey for drinking :) Good one Rik :)

Agreed! I use all sorts of fruit in my Christmas fruit cake and people are blown away. (I do add some alcohol to it. Often rum, maybe some rye. Mmmm.)

Growing up with siblings in a baking household and even now in my senior years having lived through the rough and tumble of the game called life, there are two important rules in cooking that remain constant: fighting over who gets the end piece of any loaf, the best part in my opinion, and who gets to lick the bowl and mixing spoon! Serious family disputes have arisen over these issues, sometimes requiring high-level mediation of expert negotiators. Could the dried fruit be soaked in Long Island Tea, or would the Irish Barmbrack Police come calling for such a travesty to this variation? What a delightful custom of placing a surprise in the loaf! Love it! I can hear your cat meowing in the background, probably asking politely for a few crumbs of your yummy cake. Looking good!

When my kids were little, 1 would get a small spoonful unbaked batter from the cake pan, 2 would get the beaters, and 4th would get the spatula. They kept track of who got what from the last time, and would switch around.

I wanted so badly to have a big spoonful of that batter. It looks so good! Heat advisory days are here and my kitchen does not have AC so my baking will have to wait until things cool a bit. I may build up my supply of raisins until then.

Being from Minnesota, my wife and I never heard of tea cake. We thought it sounded interesting, so I made a loaf this morning. I'm eating a slice right now with coffee. You're a man after my own heart. We would be fighting for the end crust but luckily there are two ends to every loaf. I gotta give this a go so I can try that end crust for myself. I'm thinking with butter or clotted cream and jam. Thanks for the recipe.

I'm 82 now, but I remember my English Gram making many of the things you've featured on your channel. I don't think she made this one, though, so perhaps I'll try it meself! I do recollect the Yorkshire Pudding she'd make once or twice a month, whenever we could afford to have a roast for dinner, and that was wonderful! Like others here, my Irish Nan used to make brack - sixpences and all. More years ago than tears can fill. Last time I had it was in a small cafe (Scotland oddly enough - though no sixpence.) They asked if I wouldn't mind the end crust. I told them if I didn't get BOTH end crusts, I'd never return. At 80, I still bake and cook on the rare days I have the wind for it. Never made brack myself - but I'm about to try. Thing is - what on earth is mixed powder? At 80, I've never heard of it. Still got some old sixpences though - been through many a pudding. My grandchildren complain they can't spend them. Dear me, how sad, never mind! And - to hell with doctors - best butter on it! There's more to life than not being dead yet !!

I am Jamaican and Ireland has had a big influence there, so interestingly, we have a similar desert we bake, but its called fruit bun and traditionally we slice it and place sliced cheddar cheese. I love it.

Thanks for the video, Rik. I make this occasionally and is one of my favorites. Its very hot here in northwest Wyoming and i have no a/c, so my oven doesn't get used. It looks like a fruit cake I would eat. Just need to adjust the sugar for a diabetic. Might add some Captain Morgan Private Stock. One of the reasons I haven't made Logan Bread is the amount of added sweetners.

A recipe like this calls for about 150g sugar I knocked it down to 120g - it can be knocked down to 100 easily with the fruit in. Thank you. Best, Rik
I have never made this before,but last night I made banana bread,which as I’m sure you know uses the same base recipe,though mine is a bit richer with melted butter,then again Rik yours has the butter on the out side,so they are probably as rich in the eating.I put plumbed up raisins in mine,and broken up walnuts.I often make it because they only sell bananas in bunches of 6-8,and I only like to eat a banana when it’s yellow,and covered in brown spots,so at that stage you can’t eat them for more than 3-4 days before they become too ripe for my taste,so I always have left over bananas,at work I made roasted banana ice cream,it was always a big seller.😊

Sounds amazing! We made banana cakes here and sold thousands to the supermarkets and customers. Not the usual cake though - I might make one day for the channel - anyhow that was leading me to tell you - I used to buy whole bunches - 15 rows of bananas per bunch. I would wait until nearly black skins (nothing wrong with the banana inside) peel mash and freeze in kilo bags. Might to big for your needs. However for cakes and puddings the banana is exceptional. You can put 1 candied cherry,well drained in the cake instead of the coin. Anything edible for the secret find works.
