Thank you for showing the step-by-step instructions on what buttons to press on the Instapot. I have had one for almost 2 years but find it so intimidating, not knowing how to program for cooking different recipes. I will be making this dish tonight 😊

This is an interesting approach and looks delicious. I'm wondering, do the carrots counter acidity as sugar would? It seems they might. If not, I'm thinking I would need to add some sugar--not as a means of sweetening necessarily, but rather as a foil for all of the acidic tomatoes. Anyway, I'm going to try this and check out your blog.

Yes, the entire vegetable mix of diced onion, carrot, and celery has a overall sweetening and mellowing effect. Like mirepoix in French or soffritto in Spanish/Italian cuisine. The longer you precook them on low heat (without browning) the sweeter they become. Using lots of fresh herbs especially parley and basil also helps to balance tomato's acidity. But of course if you are used to a bit of sugar, you can do that here too.

Looks good and enough sauce, wich we like 😉 If we use whole wheat spaghetti do we need to add more liquid? Tfs 😄

I've made it with different types of pasta and the same amount of water. But yes, the whole wheat absorbs more of the liquid. So if you like it very saucy, which it sounds like, you could add more water (maybe 1/2 cup) before cooking

Seems like the liquid level is really high in the pot exceeding the line inside the pot
