Instant Pot Ribs: PERFECT Ribs without a Smoker!

This is an easy recipe for Instant Pot Ribs made with a simple spice rub. These ribs are FALL apart tender and finger-licking good!

Recipe:
1 rack ribs spare ribs or baby back ribs
1/4 cup brown sugar
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons paprika
1 teaspoon smoked paprika or additional paprika
1 1/2 teaspoons kosher salt
1 cup apple juice
1/2 teaspoon liquid smoke optional
1/2 cup barbecue sauce
Directions:
Mix together brown sugar, paprika, smoked paprika, garlic powder, onion powder, and salt in a small bowl.
Remove the membrane from the ribs. At one end of the rack, slide a dinner knife under the membrane and over a bone then lift until the membrane loosens. Grab the edge of the membrane and pull it off--it may come off in several pieces.
Generously rub the spice blend over the entire surface of the ribs.
Place trivet in pressure cooker. Pour in apple juice into bottom of inner pot. Add liquid smoke. Roll ribs in a circle and place on trivet in pressure cooker. Place lid on pressure cooker and be sure vent knob is pointed towards sealed.
Cook ribs on High Pressure. For Baby Back Ribs set cook time to 25 minutes. For Spare Ribs set cook time for 35 minutes. To set cook time, hit manual or pressure cook and use +/- buttons to adjust cook time.
Once cook time has elapsed, allow pressure to release naturally for at least 15 minutes.
Optional Step: Place cooked ribs on sheet/broiler pan. Brush with your favorite barbecue sauce. Broil under high heat for 3-4 minutes. Flip, brush with more BBQ sauce and broil for 3-4 minutes on other side.

    You have just changed my rib making life!! I did need to make a few adaptations but nothing drastic. I used sliced apple I had frozen after apple harvest with water in place of apple juice. My gosh this recipe is a hit! Thanks so much for sharing.

    Kristen - I use a butter knife to slide under membrane, then insert finger to pull away membrane cleanly.. Also, start in middle of slab. Thanks for recipe.

    Serrated knife. Secret is using paper towel to pull it off, otherwise too slippery.

    Wonderful presentation and directions on setting instant pot. That's what makes first time use scary. Will do this tomorrow! Any way u can make a video on ribs just like this but using like dr pepper or something as a brine ?

And thank you for the suggestion for future videos :) If you would liket to brine or marinate your ribs, simply place in brine liquid or marinate (like dr pepper) for 12-24 hours before following these instructions for cooking :)

    Hi, Thank you so much. Your ribs definitely looked more than yummy! I will definitely try these in my brand new Instant Pot Pro 8qt I just received for my yes 80th birthday. I am curious though why when searching baby back rib recipes most of the recipes called for 4 or 6 cups of apple juice & about 1/4 cup of apple cider vinegar. I thought my goodness that is a lot of apple juice, Just wondering if you might know why the difference? Also can these ribs be frozen after cooking and if so, before the last step of putting on the barbeque sauce or after? I am having a big event and given I have a lot to contend with want to prepare ahead. Thanks again!I

    Hi Deena! Well happy birthday to you! I don't recommend cooking the ribs IN the apple juice as some recipes do, as that results in a boiled flavor. Hence less broth. You can freeze the ribs, but I would recommend doing that before adding the BBQ sauce. Once defrosted, coat with BBQ sauce and then broil. Enjoy!

    Instead of apple juice I use beer and it really gives them a nice smoky flavor especially if you use an amber or IPA

    Before you try this, make sure you find your favorite BBQ sauce first. It ain't easy. Most stored bought sauces taste really low. Try KC Masterpeice + Sambal Olek. That worked for me.

    How do you know the difference between Baby Back Ribs and Spare Ribs. I thought there were only Pork Ribs and Beef Ribs.

    It should say right on the package. Baby back ribs come from the top of the rib cage, near the loin and backbone, while spare ribs come from the bottom, near the belly.

    Hmm, it shouldn't be dry. Be sure to do a natural pressure release. And I do recommend finishing with BBQ sauce.

    I have not experimented to be able to tell you. If you are just looking to crisp up the ribs after pressure cooking, cook for 3-5 minutes at 400 degrees.

    Made this a couple days ago. OK, but not super tender. I wonder if I cooked too long, or too short? I used 35min. Hmm.. these were not the best, I am sorry to say. They were not the worst, either. But.. average. Sorry. 🤨

    What type of ribs did you have? Spareribs or Baby back? Baby back only needs 25 minutes. And always be sire to do a full pressure release
