TOUBAKOUTA, SENEGAL - Today we’re in the village of Toubakouta in southern Senegal, West Africa. We’ll be cooking and eating a dish called C’est Bon (That’s Good!), also known as Thiebou Diola. It includes rice, fried and grilled fish, pounded hibiscus leaves, and the world’s most addictive onion sauce with mustard. This is one of the best dishes I’ve eaten in West Africa and I can’t wait to share it all with you!
So again we’re in Toubakouta, Senegal, a small and relaxing riverside village in the southern part of Senegal.
C’est Bon, which literally translates from French as That’s Good is the name of the dish that’s beloved in Southern Senegal. It’s named that for a reason, it really is that good. The process of cooking it is complex with so many different components included. Some of the ingredients I loved most were the onions, garlic, goana chilies, lots of black pepper, and lime juice. The fish was first coated in a spice paste, shallow fried in oil, and then charcoal grilled to give it an incredible smoky fiery taste.
One of the spectacular parts of Senegalese food is the assembly of the platter. And C’est Bon is a West African food with so many components that makes it special. Rice, fried fish, hibiscus leaves, onions sauce, and finally a drizzle of fragrant palm oil to bring the flavors together.
It was truly a magical meal experience, incredible flavors and another spectacular meal in Senegal, West Africa!

Mark really knows how to embed himself and let the culture transform him. Using his hands...that's exactly how to do it. He is so humble. He visits villages, instead of high-end pretentious restaurants. He really gets to the authentic nature of how to eat the foods. Very impressive.

Amazing! C'est bon is my favourite Senegalese dish, and one of my favourite dishes in the whole world. I've literally been hoping for years to see you eat and react to this dish on your channel. My Senegalese wife does a fantastic version with raw onions marinated in lemon and chili. Glad you enjoyed it! Don't know if you'll be going to Casamance but that's where all the best dishes and ingredients come from, such as this one, and Caldou, Etodiay etc.

This what I call true life and organic.
I love these vlogs where we get to see dishes you cannot create (taste wise) anywhere other than the exact spot they are at. All of the ingredients are similar to a dish you may try to make at home, but everything from the vinegar and salt to the local spices and vegetables are going to taste different. Even the residual tastes they get from their mortal and pestle are going to add a flavor that you are not going to get anywhere else. i wish I could try that food, as well as many others.

Since I've been watching Mark's videos, I was secretly hoping that one day he would visit my country Senegal. But then I was saying to myself, "We don't have anything interesting he could show to the world". Guess what, I was COMPLETELY WRONG! This Senegal Food Tour series completely blew me away! I am so proud of my country. Thank you Mark Wien and thank you Papy for taking him to the right places. Jerejef!

Being born in Senegal and spending most of my life , I really thought and told myself that the other part of me which is Ghana had more interesting food ! But I was so wrong to think that Senegalese food was limited 😅 am really glad he had the right tour and showed it to the whole world ! Sorry I had to add another full comment about how I felt 😂
