The Importance of Measuring (The Floridita)
There are two distinct camps that bartenders often segment themselves into, those that free-pour and those that measure. Personally, I am a strong proponent of measuring. I feel that the only mildly valid argument against it, is that measuring takes a little longer, and so in a very busy bar it might slow things down. While it is possible to train yourself to be fairly accurate at the free-pour, it is also possible to train yourself to be fast enough at using a jigger that it doesn’t matter. I have no intention of settling this debate here, but I do feel it is valuable to emphasize the importance of properly measuring your ingredients. For some drinks, the proper measure is more important than others. One-Quarter of an ounce is not a very big measure, and it can be easy to accidentally over or under pour by that much when mixing drinks. Drinks such as the Old Fashioned, Manhattan, and Martini are such that being off a little bit may not be very noticeable, but when mixing drinks with tart citrus, or intense ingredients like Chartreuse, that 1/4 ounce can make a big difference.
I think many bartenders see it as a rite of passage to feel they are skilled enough to free-pour, while others see it as a sign of how serious they take their craft that they carefully measure everything. Feel free to make up your own decision on this issue, but hopefully you realize that whether you free-pour or jigger, being sure you get the precise measure is important for making great cocktails.

Recipe:
1 1/2 oz rum
1/2 oz fresh lime juice
1/2 oz sweet vermouth
1/8 oz créme de cacao
1/8 oz grenadine
Instructions:
Shake all ingredients with ice.
Strain into a chilled cocktail coupe.

    OXO also makes a jigger and I'm sad I lost mine! First off a cheap jigger with a hard edge can cut you when you clean it! It's happened to me! This is the only jigger I've found with incremental measurements inside of the two measuring areas as well. Not needed when you have all three sized jiggers, but here's a way to only own one. And finally the luxurious part of it... a rubbered center makes it nice to hold! Probably wouldn't rave about it but I got it for free and I feel like I've lost a friend I've got to pay quite a bit of money to get back.

    I love mine! It's about the only thing I use to measure cocktails. Much faster and easier than a little measuring cup. I hardly ever see them but you can order them on Amazon. I don't know why Target stopped carrying them.

    The OXO shot cup lacks a 3/4 oz line. It's a sad flaw on a nice tool.

    The problem with jiggers for home bartending, is that you always spill a few drops when filling them all the way up and when turning them around. (The home bartender can be assumed to be slightly drunk) If you have a large measurement cup you don't have to get alcohol all over your counter.

    The jigger I just bought has the 2 oz line below the rim of the jigger......so less or none will be spilled making the 3rd or 4th drink. :)

    Ok, to limit spilling, use a Japanese jigger. They’re rounded to the top, it helps with containing the measurements when you fill it right up. Another thing I do, is pour a little less than full, and then pout a little from the bottle straight into the shaker.

    Sometimes I look at recipes of cocktails and another drinks, I see an ingredient of 8 oz or 10 oz ice. How’s it possible to measure ice as oz? Thank you for your video. I totally agree that bartender needs to use jigger if they really care about drink

    It's really up to you how much ice you use. If the recipe calls for that much ice, it is usually because the drink is served with ice and needs to fill a certain amount of the glass to make a full drink.

    Hey im developing a piece of bartending equipment that has potential to become industry standard. Other than patenting which is obvious, what advice can you give me. The idea really is ingenious. Some old school advice would be greatly appreciated.

    If you want it to be used in the industry, make sure it can be easily used in dim light, and quickly. Easy to clean is also important. And use metal and glass if you can because everybody likes how it looks. Sometimes the right kind of plastic is appropriate as with those Chef'n juicers. People think they are flimsy but they are actually very tough. They bend a little because they are designed that way.

    Problem with jiggers is not filling them to the fill line - leaving space to avoid spillage or just not knowing where the fill line is. With those conical ones coming a 1mm in under the fill line is being out by an 1/8th which makes it no more accurate than a free pour

    Hello Sir. Could you do me a favour for a Biig Star. Maybe you heard of her. Aisling Bea. If not check her out she is very funny. Could you mix up this cocktail and mak it zing just for he by this Christmas. Vodka. Irish Mist or Velvet. Rum Mango juice. Ice. Nutmeg. I call it the Fishy Rat. as she is a Pieces born in the year of the Rat. Ou might have a better knowledge if any of these ingredients might be better served with something else. But stick with the first letter of the ingredients I've listed as they spell Vermin. Hope I'm not imposing on your time but you might enjoy the challenge of of putting a smile in the cake hole she has for a mouth. So if you decide to do it Thank you ever so much and hope you have a great Christmas.
