Train with Kata, but don't be a slave to them. For practical purposes they are shortened . Preferably don't let them grab you.

Hey guys. You know what would be so much more valuable? Include someone not as muscular / big as you 2. Put in a person in their mid to upper 5 foot range and 130 to 150 lbs. The moves you make are great for stronger / bigger guys, but what about the rest of us?

Leverage and angles make the difference. Any sweep or throw by an average-sized person can be devastating if the leverage is there. You don't have to be huge to get results. Ronda Rousey is 5'6" and billed at 130-135lbs -- exactly within the parameters you mentioned.. She broke a reporter's ribs with a throw and a nasty landing. She applied what she knew with great technique and bad intentions. Most martial arts practice is about flow, timing and application of knowledge. Sometimes the best defense is to leave... other times it's to make the other wish he left before messing with you.
