imo the Middle East and some North African cuisine is the best tasting all around vegan that has tons of recipes to try each one better than the last. Indian is very close, and I'd argue it has better tasting vegetarian dishes than vegan due to paneer being so awesome. But imo Afghan has the best tasting vegan food there is hands down. It's flavor profile is inbetween Indian and Middle Eastern taking the best from both. Try Afghan cauliflower curry sometime. It's really good!

My biggest issue with vegan meat substitutes isn't the taste or the texture, they can actually taste very nice. It's that they are just so expensive here compared to actual meat for the same weight. Same story with vegan milk alternatives. I don't specifically only want to drink cow milk, and I don't hate the taste of almond milk or rice milk, etc. But when it's almost triple the price at my local store, I'll just take normal milk instead. @@mischarowe

I'm reading a book on plant based diet called "The Proof is in the Plants" by Simon Hill. And I'm someone that loves eating chicken, I eat chicken biryani regularly and can't get enough of it. And this book isn't from some random either, the author literally has a masters degree in nutrition (his backstory was that his dad got a heart attack and years later he wanted to know how much diet and lifestyle play a role in living longer and healthier) And the book is agenda free and not demeaning, heck he even criticizes some diets that claim they are vegan but are actually unhealthier, its just facts and he links to studies for every claim he makes, I'm like 25% in the book and still highly recommend it to anyone that wants to know more about nutrition and stuff. A trick to save time on cooking is to always cook an extra portion or two of dishes that require time like that lentil dish. Than either eat it for lunch next day or freeze it and every time you are too busy or tired to cook and are most likely to order a take away or just have cookies for dinner microwave those portions. So you always have a nice choice of soup, stew, pasta sauce,.... ready to eat.

I tend to do half dishes--when I make a sauce, like nam prik pow, I make a huge amount--and freeze that. Pesto is made in large batches when my basil is in season. Then I have to just cut up veggies, make a starch and the complex part of dinner is already done. I also make things like soups in large quantities and divide it into meal-sized amounts to have soup and _____. It makes it feel better to only have to think of part of the meal when I am tired and hungry.

Legumes (chickpeas, lentils, beans etc.) are also very easy to store in the soaked form! You just have to soak, rinse and cook (with more water than usual) them as normally, in whatever quantity you want them - and then close in sterilised jars as any other preserve. This way you can have legumes in the same ready-to-use form as with store-bought cans and jars, but much cheaper, since dried versions cost less:)

So much to to explore on tofu. I'm Malaysian and we use a lot of tofu in our cooking. There are tofu, silk tofu, tempeh, fried tofu, dried tofu skin, tofu ball and Fuchuk. You can braise it with soy sauce (Chinese style), stir fry it with other vegetables (try making tempeh stir fry Indonesian style), put it in Malay coconut curry, or south Asian curry, deep fry it & dip it in sweet sour sauce (Thai style), or put it into soups. It's so versatile & delicious. P/s: I've also moved into a whole food plant based diet this year, it was easier than I thought, but I still include eggs for the b12 vitamin. I realise there is so much versatility in plant based cooking and you don't need to include fake meat at all.

About the sauce*, these are the must-have basic Asian aromatics that you can use for any tempeh or vegetable stirfry: light soy sauce, sesame oil & vegetarian oyster sauce for Chinese cooking. Vegetarian fish sauce & garlic for thai/Vietnam style cooking. A blend of garlic, onion, Chili, tamarind and vegan belachan for Malay style sambal. If kimchi has a little shrimp paste in it, it's not the end of the world. I've eaten plenty of kimchi without shrimp, btw, I'm just saying, don't let the perfect be the enemy of the good. Vegans should keep in mind just how drastic of a change completely cutting animal products out of your diet is and that not everyone is gonna have the mental strength and commitment to go all the way just off the bat. Dunking on people because they can't or won't immediately commit all the way is not gonna make them go vegan. If anything it's gonna push them to stop whatever small effort they were making in the first place (maybe one vegan day a week or plant-based, except for cheese) for the sake of social conformity. And any vegan who looks at this and goes "good, we don't need people like this" has completely lost the plot.

When I made the switch I did it almost overnight and one thing that helped my body adjust to the big amount of legumes and vegetables all of a sudden was to cook classic Romanian dishes that don't require meat to have ready in the fridge (potato stew, sauteed cabbage/varza calita, green bean or peas stew, countryside soup, pilaf, etc.), change 2 ingredients in my curry recipes, and test 2-3 recipes/week for meal prepping to quickly get the base foods covered. I just want to add that although I like the holistic way of eating vegan and not using 'mock meats', there's another way to look at it. A lot of these 'fake meats' are just plant based ingredients cooked in a unique way. A lot of the healthier vegan burgers are just legumes and vegetables mixed in a food processor and shaped into patties for example. So just think of it as exploring new ways of cooking plant based ingredients, cause that's all it is. As far as the more highly processed mock meats, they still have a place. Majority of vegans are doing so for the animals and environment. If they grew up enjoying animal products, they can still do so only without actually harming animals

It was a really eye-opening experience for me and it did challenge me to try and make way more varied dishes and to discover new foods I loved. I also share the opinion that these fake meats are not the way to go, plant-based meals can be incredible and are absolutely capable of standing on their own without trying to substitute to be meat.

Yeah lactose intolerance is really a pain (figuratively and literally), especially with how prevalent whey is in foods that don't seem like they would even have dairy, but have whey (at least where I am). That's been one benefit I've noticed with the increase in non-traditional products (like non-dairy milks like almond or oat), it still tends to be more expensive but they're easier to find

Why the hate for veganism? I'm a dude who loves meat, be it pork, chicken, turkey, duck, fish, or beef. One of my old neighbors and vegans made this vegetable stew one time where the broth tasted like meat. It was so delicious I'm pretty sure I had fifths of it. I never had a problem eating vegetables at any age, but now that I'm older, I'm glad to have been introduced to chickpeas in either solid form or as hummus, along with plant based options. Take a gamble on yourselves and you might be surprised at how good plant based options will improve your health, and that includes the bedroom.

Kwook, you should investigate chickpea flour. As besan, it is so versatile that you can use in in sweet and savoury dishes, and baked goods, and it makes a mean Tofu - the Nepalis make both Silken and Firm tofu, by cooking besan into a savoury thick porridge, pouring it into a container and letting it set. You can cut in into any shape and make curries, or chips, dumplings,. You can make quiches, muffins and breads both risen and flat, and pasta. And then there is Socca - a chickpea flour pizza-like dish, with salt, water, olive oil, topped with onions, peppers, cooked in the oven. You can eat it hot or cold OMG. And cooked chickpea dishes and freeze well. The downsides are that 1) besan/chickpea flour tastes bitter if its not fresh, however, if you toast it lightly in a dry pan before you use it in recipes, that removes the bitterness completely. 2) the benefits of legumes are a two-edged sword, because the insoluble fibre is extremely important, but your gut's flora, are like drunken sailors when they don't get enough, and make you fart. They literally have to evolve to handle all the good fibre. But, soaking besan flour batters for few hours or overnight, tempers down the windiness. Just like you showed in this video, getting the best out of vegetarian and vegan food needs discipline, because you have to work with the ingredients to get the maximum deliciousness from them. So, if I want chickpea flour pancakes, I toast the chickpea flour, and make the batter in a jug with The stick blender. Cover it and leave it to soak over night. In the morning, I just whisk the batter and make my pancakes, or bake a Socca, and aim fine for the rest of the day. It's very different from just pulling a bit of meat out the freezer. And works best if batched cooked. Socca with onions, mushrooms, and peppers is great frozen, and reheated in the oven or is frying pan. Or eaten cold, or served with a salad. Seasoned with garlic, herbs. It is such a versatile ingredient, that it's a permanent pick for me, even though I'm not vegetarian by inclination, because I love meat, but I love my health more. So, I have to be prepared to take the rough with the smooth, because it has expanded my food vocabulary. Just like Ottolenghi did for you. There is dome thing healthy I can have fun with working with the ingredients, rather that insisting they were something else. So, thank you for sharing, and I hope you find more inspiration on your journey. Santé!

Here’s some advice for eating plant based from a 13 year vegan. 1. You were definitely putting more effort into vegetable prep than you need to. It’s ok to use convenience items like canned and frozen food to cut down on time. In addition to that, it may feel like you were putting more time into preparing tempeh than meat, but you were also learning a new skill. If you were to prepare tempeh a few times a week, that 40 min of cooking would be cut down to 20 very quickly. A really quick and easy meal I make myself all the time is a southwestern style burrito. The ingredients are black beans, hash browns, greens, and salsa verde. Now I could take an hour and a half to sauté onions and garlic before simmering my beans, making homemade salsa, and cooking and shredding my own hash browns from whole potatoes. But instead I cut down time by instead heating up canned fat free refried beans in the microwave before stirring in onion flakes, tomato paste, cumin, oregano, and pre-minced garlic. Then I rehydrate dry hash browns with hot water, and after wrapping it all in a tortilla, I finish with store bought salsa. It’s healthy, quick, low waste, and it tastes just as good as the long version. 2. You’re probably eating way more protein than you need to, especially if you’re not an athlete. I was a professional dancer and I now teach yoga for a living and I’ve never needed to supplement with protein powder or worry about making high protein meals. It’s a common misconception that just a normal human needs like 80 g of protein a day. You don’t. What most dietetics associations recommend is between 30-50 g a day for a moderately active adult. The protein obsession in the west is just a marketing ploy to sell more whey. Essentially, if you’re getting enough calories, you’re getting enough protein. With your love of beans, you definitely don’t need to worry. 3. Most people experience some bloating and increased gas when they go vegan. It’s because you’re eating much more fiber than you were before. It goes away when your digestive system acclimates to the increased fiber. For most people it takes about a month. It’s also an indication that your non vegan diet is a bit low in fiber, so you should try to incorporate more whole plant based food now, like whole grains, nuts, and raw fruits and veggies. 4. When learning vegan culinary skills, seek help from vegan food creators. There’s plenty available that have an endless wealth of tips and skills to share. I recommend fit green mind, hench herbivore, and rainbow plant life. We vegans have spent years discovering new ingredients or better ways to use old ingredients in order to maximize eating only plants. We’re happy to share. 5. And finally. Nutritional yeast. Put it on your pasta, salad, bread, soups, sauces. It’s delicious. There’s a reason we put it on everything. Get yourself some and thank me later. I hope this helps!

As another vegan (only 7 years here), I wanted to go over some of the points you made. 1) Although I also use convenience items, I think he was making many things from scratch because this is a cooking channel focused on sharing recipes and cooking techniques. For a vegan channel trying to make vegan food more approachable to the general public, those tips would make sense. I also agree that as he gets more familiar with new ingredients and techniques, he will get faster at making vegan dishes. 2) Even though there is an obsession with protein in the West, podcasts with health scientists focused on nutrition seem to be reaching the conclusion that for optimal health span, it is best to build up muscle mass before middle age through increased resistance training, be it weightlifting or otherwise. The increased muscle mass will serve as our muscle reserves into old age, so there is an increased need for protein (0.8 to 1 g or kg of body weight) in that case. That being said, that requires people to be physically active because too much protein consumption with low levels of physical activity then creates a surplus of branched-chain amino acids that can now feed cancers, not good, rather than muscles, which are good to maintain strength, stability, and balance in later years. Still, I prefer people consume protein from whole foods sources over isolates on most days. 3) A lot of the bloating and gas comes from beans (and other legumes) and cruciferous vegetables, specifically. Here, it pays to observe the traditional diets of populations that have been consuming these foods as staples for centuries. Soaking, sprouting, and cooking beans for longer periods of time helps break down and/or wash away the raffinose sugars in beans that feed bacteria in the large intestine that then produce gas. Kombu (kelp from Japanese cooking) contains enzymes that break down raffinose, and cumin, epazote, and asafetida from Mexican and Indian cuisine also help. Turmeric and ginger can also help with bloating. Fiber alone should be increased gradually as many westerners don't consume the minimum suggested requirements of 30 g per day, and vegans can eat 80 g and more and be fine. Rural populations in Africa who consume plant-based diets eat over 120 g of fiber per day! Give yourself one or two weeks to transition, and increase your water intake significantly as either diarrhea or constipation may arise for those drastically increasing their fiber consumption. People with bowel conditions need to proceed with caution as certain people may have intolerances to wheat, nightshades, alliums, soy, etc. that becomes exacerbated, and SIBO is a thing that stops people from continuing their vegan diets. 4) I second this and also encourage people to check out Brian Turner, Simnett Nutrition, The Korean Vegan, Cheap Lazy Vegan, Mommy Tang, Caitlin Shoemaker, Sweet Potato Soul, Fully Raw Kristina, Pick Up Limes, Hot for Food, The Edgy Veg, Peaceful Cuisine, Gaz Oakley, Yeung Man Cooking, SauceStache, Thee Burger Dude, The Happy Pear, and so many more. Moreover, there are many cooks and chefs who are not vegan but who make vegan dishes (or easily veganizable dishes) every now and then. That and many ex-vegans I used to watch still have all of their vegan recipes up on their channels. 5) Nutritional yeast is an acquired taste. Not everyone likes nor tolerates it well (it gives my mom bad stomach cramps). Also, the brand makes a huge difference. It's more of a trial-and-error approach. In certain sauces, it is very good.

@@letsdomath1750Are there any actual serious studies showing causation in humans regarding prot/cancer? Sure if you eat 150g of protein daily from streaks and pork and butter there might be an issue, but mostly due to the saturated fats. I eat a normal vegan diet mostly Whole Foods prepared at home, no supplements and without even trying I get 85 g of protein a day just from a of meal with tempeh, broccoli, a scallion pancake and for breakfast overnight oats with peanut butter. That’s plenty enough for me, maybe too much. I put my meals into Cronometer just for fun and it shows I surpass all micro and macronutrients with flying colors. The protein shakes are overkill and just a ploy to make people buy useless stuff that they don’t need. Also yes to nutritional yeast- it gives you more B12 than the daily recommendation

Responding to your point about the food being less efficient to cook. I am Indian and I have eaten mostly vegetarian food for the entirety of my life. Most people don't know this but many of the Indian Hindus (80% of the entire population) don't eat any non veg food on Tuesday, Thursday and Saturday due to religious reasons (40% of the population is strictly vegetarian) and my family was one of those people. Both my mother and my father used to work jobs and food for me had to be prepared early when I was a kid as I had to leave for school at 5 (Asian schools😂). I am pretty sure that all of the food I had was vegetarian and there were abundant vegan dishes there. I would like to suggest you eat daily Indian food rather than famous Indian food. Another thing... meat here in India is not stored in the fridge and you cannot buy it at the supermarket. You have to get it personally cut at a butcher's shop where they pick up a live chicken cut its head off and prepare it in front of you while you order what cuts you want and how big you want them to be. That contributes a lot to why we don't have meat everyday.

It can be blended into smoothies and creamy pasta sauces, and it's really nice on noodles / instant ramen. Bean burgers are filling and are great if you are really strapped for cash. Indian food is the best vegetarian food in my opinion so look there. I also feel like a simple bean stew is a great place to tart. Quick base of onion and garlic in oil plus chopped tomatoes then you can add all sorts of herbs and spices, you could add cider and put dumplings on top to make it british, put feta and oregano on top, or do pesto and some pasta mixed in.

I really like the approach you take in this video. I've been wanting to try and cook some vegetarian and vegan recipes after realizing how much I depend on meat and diary products, and wanted more variety in my diet. Seeing you trying new things and being open to change like this is motivating! I'm a very picky eater but there are so many things I haven't tried that you used in the recipes you showed, and it looked delicious.

I think what a lot of people in the west (vegetarians and vegans included) often don't realize is how much easier plant based dishes are to create in most non western cultures. Most non western food cultures until very recently naturally evolved to be mostly plant based, because obviously meat and other animal products were usually much more expensive. For example, the shift you take to be an Indian vegan is soo much smaller than a western vegan. Trying to make a western diet vegan vs just eating dishes that are naturally vegan (or close to it) takes a lot more work for an often inferior product. So to anyone who comes from the west or another heavy meat eating culture who wants to go plant based, I highly recommend checking out other cuisines for plant based dishes. This will make your life easier, and probably healthier. My favorite is Indian food.

To use your cooking time more efficiently, you can batch cook. It takes roughly the same amount of time to make 10 portions than 4. So make a lot and store it in the freezer in portion-sized freezer bags.

I'm challenged myself for 30 days and try to increase the day if I achieve that destiny. As an Indian, I'm happy you tried an Indian food, there is a lot of Indian foods which vegan without removing anything, like Idli, Dosa, Samosa or my state's popular dish Litti Chokha, and I will recommend you to dive deep in Indian foods' list. You'll find a lot of Vegan foods. I hope that you'll be a Vegan one day...

its cool that you are trying to challenge yourself but just know that it's okay if you cannot be fully vegan, some bodies actually are not incline to eat fully vegan and that is okay, our bodies absorb things differently and the most important thing is to just be more mindful about sustainable ways to approach food as a vegan I never advocate for ppl to just go vegan overnight or stay vegan if it does not work for them it is better to just eat a bit more plant based dishes than nothing at all also if you want some inspo I love sharing some of my vegan meals over on my KZread channel if you want to check it out

I live in the Netherlands as well and honestly I don’t think I’d be able to eat how I do if I didn’t. I’m not vegan or vegetarian but I’ve cut a lot of meat out of my diet mostly due to finances. I eat seasonal vegetables but the basis of almost all of my dishes is a combination of potato, rice, lentils, carrots. I hate the flavour of carrots so I’ve basically taught myself to cook them in a way where I don’t taste them anymore.

I’m not vegan but I do look to eat more vegetarian and even vegan foods when possible. At home, I don’t buy beef (relatively unhealthy protein and bad for environment) but eat almost entirely chicken or seafood as my animal protein while incorporating as much tofu, tempeh and other protein alternatives where possible. My favorite is soyrizo - Mexican chorizo (crumbling sausage) made of soy. It’s much healthier than the beef/pork Chorizo and taste fairly close. I also eat more and more beans. Beans are one of the few foods that can often reduce my craving for meat when I’m eating. Pinto beans are my go to (creamy, filling, flavorful but not too strong in flavor) though lentil and chickpeas (garbanzo) are more versatile

Going vegan is definitely a journey (i was vegetarian for years before switching), but every hardship that you experienced will eventually be easier when you learn more.
