I Tried Making Those Floating Meringues from TikTok | Baking Adventures

Join for the first installment in a new series on my channel called Baking Adventures, where I'm going to challenge my average baking skills with new recipes, baked goods, and techniques I've never tried before! First up are these adorable, floating meringues that I became obsessed with on TikTok. They probably won't be as perfect and adorable as the originals…but I'm going to do my best. 😅 It's sink or float in this one, hope you enjoy! Let me know what I should make next!

Cookingwithamyy/Amy's Kitchen recipe & T Pow's timestamps: (keep in mind, large-surfaces float better) Ingredients: 40 g egg whites (approx 1 egg) 2:34 70 g granulated white sugar 3:38 1/2 tsp vanilla extract 20 g powdered sugar optional- food coloring optional writing gel- 1 tsp powdered sugar, 1/4 tsp water, food coloring Directions: 1. Combine egg white (40g) & sugar (70g). 3:38 2. Stir constantly over low heat, until it becomes white and well mixed and reaches a temperature of 110*F. 4:17 3. Remove from heat, and stir as it cools. 5:09 4. Once cooled, use whisk mixer to mix on medium-high for 5 to 7 minutes. 5:54 5. Add vanilla extract (1/2 teaspoon). 6:20 6. Mix for 5 to 7 minutes on medium-high. 6:24 7. Mixture should be runny but holding its shape. 6:50 (6:57 is example of mixture that's runny, but NOT holding its shape. Mix at minute intervals until desired consistency.) 8. Add powdered sugar (20g). 7:28 9. Mix for 5 minutes at medium-high speed, and afterward reduce speed to low for 30 seconds (this step eliminates air bubbles, which reduces the chance of meringues cracking!). 7:41 10. Mixture should be glossy and have soft peaks. 8:10 11. optional- add food coloring at this point. 9:31 12. Add to piping bags. 9:50 13. Create meringue shapes onto a baking sheet lined with parchment paper. 10:58 14. Bake for 60 to 90 minutes at 165-175*F, aim for low and slow, adjust as needed for your local elevation/humidity/device. 14:28 (her results at 15:05, they cracked and developed 'feet' despite her having checked on them 15 to 30 minutes in to them baking) 15. optional- decorate with gel (1 tsp powdered sugar, 1/4 tsp water, food coloring. Alternatively, just buy writing gel). 15:58 16. Enjoy!
I'm obsessed with meringue cookies! My kids are worried about me 🤣
I've seen people make these "floaties" into either meringue cookies or marshmallows. What would you recommend in your opinion?
I think it was when you opened the oven door and changed the temperature of the oven and that’s why they cracked.

I love that Tik Tok lady and I've never tried making these but always wanted to try. I've made regular meringues before and the texture never held up to my Trader Joe's meringues standarrd

How can I see the video recipe??
You baked them too long. You bake then turn off the oven and leave them in the oven for about 4 hours. Don't open the door. Humidity can also play havoc with meringue

What?! 4 hours? I've never done them that long. I do an hour with the oven on and an hour off. It could've been when she opened the oven at 15 min or she might've over mixed the egg whites. I did that once and they cracked. Still edible though lol
