Thank you for the open oven trick! I’m gonna try that. I’m just starting my marshmallow art journey and my daughter is so into it too. She’s elementary age, but wants to make her own and sell them! Little entrepreneur after my own heart ♥️ 🥰 We will keep trying until we are great! I’m so into getting a little treat cart going with my girl! So fun!

I've tried at least 6 recipes and none of them worked. I tried yours today and voilà! Thank you so much for including tips, they made a huge difference. I have one question and i really hope you can answer; i did everything according to your recipe but the mixture was a bit runny. I couldn't do 3d shapes (like the caterpillar you made) I wanted to make a rabbit, one small dollop over a bigger one but the bigger one was spreading out a bit. I paid attention to the temperature. Can you please help me to solve this issue? Thank you!

Good day! Thank you for your attention to my recipe and for your kind words! Protein marshmallows can be liquid for three reasons: 1. This is a high fever. Try different options and find a comfortable temperature for you. 2. Weak gelatin. I use gelatin with a power of 220 blum. 3. Liquid, undercooked sugar syrup. Or lightly beaten egg white. I hope that my tips will help you solve your problem.

Do you cover with the cornstarch right away? Or do you let them stay without touching for a while?
Do you leave the bagged ones in the oven until you need them? Say you are using green first and then a red.

When the mixture reaches the room temperature it cannot be shaped, it becomes hard. So, to avoid it, place it in the oven with the minimum heat level (usually 50°C works fine, if your minimum is more than 50 or your oven tends to burn things, keep the door open). It is also advised to place the mixture in many bags if you do not plan to work with the entire mixture very fast because of the same reasons, so while you work with one bag the others are still in the optimal temperature.

shouldn't be the eggs that smell- it's the gelatin (it smells horrible), you are putting the bags in the oven to keep them warm so they don't solidify until you can get them piped. The egg whites get cooked when you are adding the hot syrup.

Airtight container/ vacuum bag / Ziploc plastic bag, etc. You can store it in different places, f.e. on a counter: 3 days in an opened bag (speaking of a vacuum, meaning there is air in the bag but the bag is still sealed); in the fridge: 7 days, up to 2 weeks if the bag is unopened; freezer: both opened and unopened lasts for up to 4 months (but in freezer they will loose the moisture just a little bit, should not affect the taste though). Always make sure the storage is airtight, dry and dark as it affects the storage length.

because if the mixture cools down the gelatin will set, making it hard to pipe.

Quelle est la température idéal pour que la *pâte * se travail bien? Car je vois que tu vérifies souvent la température .
