    When chopping chocolate, try using a bread knife, the serrations will stop the chocolate from flying around so much.

    I make cookies by combining babish's and Joshua's recipes (basically Joshua's with brown butter, dark brown sugar and smaller balls) and it is literally heaven on earth

    Literally yesterday I tried Joshua’s recipe but I made a mistake and used the whites instead of the yolks... they are very good too but you can’t quite do the balls because the dough is much less maleable

    These are not Joshua’s perfect chocolate chip cookies, these are from when he tried to recreate the famous New York cookies that are huge and soft. He actually has a chocolate chip cookies recipe that is different.

    wright96d I needed dark brown sugar and you can either make it from granulated sugar or light brown sugar, depending on how much molasses you add. You put it all in your mixer and after a few minutes, viola. I learned it on KZread, which basically taught me to bake breads and rolls and cakes.

    @@callioscope Ah, that makes sense. You didn't mention adding molasses in your original comment so I wasn't sure what you meant. Even though I probably should've known what you meant. I guess I was also wondering if you meant that you replaced all of the sugar content in the recipe for light brown to counteract the lack of molasses.

    Sugar has molasses in it naturally, it’s stripped out to make the white sugar we’re familiar with, not the other way around. So brown sugar is the norm, even though we don’t even think it is! I thought it was cool!

    Where I live, brown sugar is not available. Although, sometimes raw/unrefined sugar is called brown sugar, but that’s not the same thing. I’m always baffled when I see brown sugar used in videos because it looks almost wet

    @@dianalove539 Seems that way. The one with the molasses it is unknown here. Our regular sugar is made from locally grown sugar beets. Molasses exists as a standalone product (used like honey), but is not popular at all.

    The “quirk” in my personal chocolate chip cookie recipe is that I use...tahini? Yes, tahini. The tahini adds extra fat so the cookies are chewy and have those nice crispy edges. They’re also pretty thick and have a nice nutty flavour. Y’all should try it.

    I'm not entirely sure that butter was "browned". I usually don't have very much yellow color when mine is browned, but there is the worry of burning it. Also! Andrew says to fridge your melted butter, but honestly you can solidify melted butter so much more quickly in a bowl in an ice bath, mixing now and then.

    That's another thing to prepare and wash though. Really annoying if you don't really keep ice. Easiest way is just place a metal bowl in the freezer before hand.

    I was thinking the same.. the butter wasn't brown enough... But the thing is, I saw some brown/almost black-ish bits there, so I guess he's just being careful not to burn the butter

    Okay so I lived in Ecuador and HATED that I couldn’t buy chocolate chips and had to chop chocolate in order to make chocolate chip cookies. So not a first world problem my friend literally. I would pawn it off to my boyfriends sister and she too hates it 😂

    Serrated blades and a little bit of force work well. If I need to chop chocolate I use a heavier bread knife. It's a bit of work either way.

    @@gabyrose2012 My boyfriends family lives in a tiny ass pueblito se llama Flavio Alfaro its an hour out of El Carmen. They just got their first Tia! Also I lived in Quito and the Supermaxi on 12 de Octubre rarely had them, maybe Megamaxi would but then they were much more expensive than una barra de chocolate. Like the difference between $2 and $6.

    Chef John is #1 in my book. I can’t understand how more people don’t love the crispy, buttery cookies. The flatter the better for me. Except when I want a chewy cookie. But a crispy, buttery edge is still essential for a good chewy cookie.

    Joshua's cookies are my go-to, I've been making them for years and they're perfect! I usually switch it up and use a little less chocolate, decrease the sugar just bc they can be really sweet, and brown the butter too

    Ok about you saying you can make powdered sugar at home: kind of. I've tried using a food processor to process some granulated sugar and cornstarch and it barely did anything, and a spice grinder made it somewhat finer but I could still feel the graininess (spelling?) in an american buttercream. I recommend buying powdered sugar, but to each their own.

    This is perfect. I've been perfecting my personal choc chip cookie recipe for YEARS so yes, the smallest things make a big difference in them. I personally do the brown butter, add an egg yolk with the eggs and three kinds of sugar (white, dark brown and light brown). The sugars have a big impact on the texture and look of the cookie.

    I have a good technique for chopping chocolate: you just need to leave it in its paper, unopened, and break up that way. It is so much easier

    I adore rosanna pansino's recipe. The dough freezes beautifully too. Hey, it might not be fancy or gourmet, but that recipe is so amazingly easy and honestly perfectly delicious, I'll pick hers as my favorite every time.

    I know two of the recipes. Only thing I'd recommend is always use better quality butter. Also, if you can find them the Ghirardelli 60% cocoa bittersweet chocolate chips are the best I've tried so far.

    David you made ghee not brown butter. Brown butter takes a longer time and is a rich brown colour. I'm sure it tasted good regardless. 🤤💕

    I disagree! Good brown butter only takes 2 to 3 minutes. His fat could have been a tiny bit darker, but the milk solids were perfect. I've seen a couple of videos recently where people use "brown" butter and it's so dark they burned the milk solids entirely. I would rather err on the side of not quite brown enough than so brown it's burnt. And it goes from brown to burnt so quickly.

    You forgot to add Food Wishes to the title lol I think you meant to judging by the comma lol. Also since Bon Appetit isn't really a thing anymore even though it technically is I think you should start testing some of the ex Bon Appetit's personal channel recipes like Claire's or Sohla's since you already test Binging With Babish's recipes and she's high key his partner in crime now lol *Edit: I have a rename suggestion in reply to this comment to fix the 100 character problem.*

    @@faithmenzies1298 Well I guess that explains it, he should probably shorten the title then to something like "I Tested Everyone's Chocolate Chip Cookies- Babish, Rosanna, Joshua, and FW's" or at least remove the comment from the end of the title. It's not like people are going to look at them and be confused who they are especially in the case of Bingish with Babish who has a separate series called Basics with Babish so the only necessary part of his name is the Babish one.

    I feel like chef John’s didn’t come out as intended for some reason. I don’t think they were meant to be awfully crispy. In the original video they massively remind me of subway cookies but fancier and that’s not quite what I saw in this video. Either way, pretty cool
