In India there is a saying 'Atithi devo bhava' which basically means a 'Guest is a God' and people here ,at least from where I am from believe we should be kind to others without wanting anything in return so most of the people will not accept the money but still it touches our heart when you try to be kind to us but you could just show that with gratitude. If you offer money it will confuse them because we are helping expecting nothing in return but only for you to return with good memories. Also in the temple or near the temple the food and water they offer is fresh so that's the only place where you can trust in other places you should probably ask the locals if water is fresh or rather buy water bottle
