I Seared A Steak Elk Tallow! How Did It Taste?

In this video, I seared New York Strip Steaks in 5 different animal fats. Cooking your steaks in different tallows not only brings out a great natural flavor it also allows for a great sear. The high smoke point of pure beef tallow has a high smoke point that allows for a hard sear.

    Butcher Wizard is a truly brave & courageous soul. It's never easy breaking up with someone, let alone on KZread for all to witness. It seemed like a fairly amicable split between you and the smoke detector....You get the house, ol' smokie gets the trash bin 🗑️ 😅

    I onced asked my three sons what holiday traditions they recalled. We used to make or buy a new ornament each christmas, watch harry potter and the polar express, go to the Grove Park Inn to see hundreds of gingerbread houses and many more fun things. They all three agreed the most memerable holiday tradition is Mom/me setting off the smoke alarm when cooking steaks (we have filet at Christmas) and because the Thanksgiving Casseroles outgrew their dishes and ‘puked’ in the oven. 😂❤ I need to go outside to cook my steak too.

    I equate the taste of duck fat to what I remember chicken smelling/tasting like when I was a kid. Chicken nowadays is so pale and tasteless, but when I was a kid chicken was a nice yellow and had such a chickeny flavor. Believe it or not you can get spray duck fat at Walmart nowadays. Thanks for giving up your day cooking and eating NY Strip in the name of science. Your sacrifices are appreciated!

    As a hunter and the brother of a butcher I have access several kinds of animal fats. If I could only use one it would be bear fat. Goose fat is a close second and the best I have used to cook french fries.

    Try different things wine, bourbon, and sour mash whiskey as to sear steak. I would use your favorite wine, jim beam, and jack daniels to sear with. Also you could try wood fire sear, propane sear, vs charcoal sear.

    Get a smoke detector that is less than 10 years old. There should be a silent button to push in case of false activation. Smoke alarms save lives!! So do good steaks!!

    Either that or just get a good fan and set it up on the opposite side of the detector, blowing towards the smoke source.

    It would be great if you could do a test searing steaks using different animal ghee's. Such as cow ghee, buffalo ghee, goat ghee, and sheep ghee.

    I'm going to keep asking this question until it's considered "Frequently Asked"... ;-) Can you do a video on how to choose a primal cut in the store? Many are in opaque plastic and are tough to see, so what do we look for and what do we avoid to assure we get the best meat available?

    Makes me wonder about bison tallow. To me, bison tastes similar to beef but with a richer more concentrated flavor.

    It would have been interesting if you had used an infrared thermometer and registered to temperature of the skillet when you put the meat in to sear.

    Omgoodness thanks for the smoke lessons. So I’m not doing anything wrong! So when searing and cooking a steak, it’s best on high heat? Lots of fat? Do you keep flipping or once each side? Thanks new here

    No don't move it, make sure it's screaming hot first, then the oil. Account for carry over cooking.

    I'm newer to the channel. What do you do with all the food you cook in a test like this? I figure I could eat 2 steaks worth but that leaves some left lol.

    Lolol 😂 I've hunted and consumed a number of elk. IMHO, elk tallow is best in small quantities and consumed very warm. It has a higher melting point than beef tallow. That nice chunk of beef fat that melts in your mouth? When it comes from a piece of elk it will coat your teeth with a thick film and you'll need a couple of cups of HOT coffee to melt it off.

    Do a test comparing fake meat cuts to real cuts of meat... i.e... steak, pork chops, ground meat, sausages of different flavors
