INGREDIENTS:
#1 Cauliflower Steaks and Potatoes
3-4 medium sized yellow potatoes
1 medium sized cauliflower
olive oil for the cauliflower
for the marinade:
2 tsp cornstarch
¼ cup water (60ml), add more as it’s simmering to adjust the consistency
1 clove of garlic, finely chopped
2 ½ tbsp date syrup or other liquid sweetener
3 tbsp balsamic vinegar
2 tsp miso paste
pinch of salt
spices of choice
for serving: vegan butter, fresh parsley
for Bella’s “Salad”:
raw cauliflower
romaine lettuce
cherry tomatoes
cucumber
corn sticks? What do you call these? also I think you have to cook them first if they don’t come in a can
→ serves 2
*If you’re making this for more people feel free to do two baking sheets, one for the potatoes and one for the cauli
#2 Homemade Cinnamon Puffs
1 ½ cups flour (280g)
1 ½ tsp baking powder
⅓ tsp salt
2 tsp cinnamon
½ cup minus 1 tbsp sugar (90g)
⅓ cup vegan butter (75g) (2.64 oz) measure it cold - then melt it!
¼ cup non dairy milk (60ml)
3 tbsp applesauce, unsweetened
also optional: 1 tbsp vegan butter + 1 tbsp cinnamon sugar
*yields 3-4 baking sheets of cinnamon puffs - store in 1-2 big glass containers
#3 Mushroom Ravioli
200g flour (7.05 oz)
100 g wheat semolina (3.52 oz)
½ tsp salt
140 ml water (4.7340 fl oz) = ½ cup + 1 tbsp
1 ¼ tbsp olive oil ( + 1 tsp for your hands later )
for the filling:
1 tbsp vegan butter
1 tsp olive oil
200g mushrooms (7.05 oz)
2 cloves garlic
a large handful of parsley, chopped
zest of ½ lemon
salt, pepper to taste
⅓ cup soy cream (80ml)
2 tsp nutritional yeast
2 tsp flour
ideas for serving:
1 tbsp vegan butter melted with 1 crushed clove of garlic
extra parsley
vegan parmesan made out of a cup of roasted, salted cashews + 1 tbsp nutritional yeast
*yields 15 - 20 ravioli
*you can freeze the ravioli once you’ve filled and shaped them - lay them all out on a plate or a baking sheet with parchment paper, freeze them for like 2 hours, then transfer the frozen ravioli to a ziplock bag or a tupperware box to store them in the freezer - just boil them for a few minutes when you want to eat them
*you can also freeze the ball of pasta dough, or freeze half the ball of pasta dough, simply wrap it up in some parchment paper and then put it in the freezer - after defrosting it, roll it out as per usual and shape the raviolis
#4 My Version of a Berry Cobbler
vegan butter for the pan
1 cup frozen raspberries (100g)
1 ½ cups frozen blueberries (155g)
3 tbsp sugar
a pinch of cinnamon
a squeeze of lemon juice
2 tsp cornstarch
2 tsp baking powder
1 cup flour (120g)
½ tsp salt
⅓ cup sugar + 1 tbsp (80g)
¾ cup non dairy milk (180ml)
⅓ cup vegan butter (75g) (2.64 oz) measure it cold - then melt it!
2 tbsp applesauce, unsweetened
*yields 1 8x8 inch, 20 x 20cm baking pan

My mom used to hand make me Bella's mushroom ravioli for my birthday every year when I was obsessed with twilight. Now on my birthday it comes as a joke 😂

Game of Thrones would be a fun one to recreate! I'd be curious to see what a vegan pigeon pie might be like haha there is also that cute wolf-shaped bread, lemon cakes... lots of possibilities. Lord of the Rings has lembas, which I am always looking for the perfect recipe for. But otherwise I can only remember, like, raw fish 😅

Perfect timing! The nostalgia trip helping me survive 2020 has definitely included Twilight. I'm reading Midnight sun at the moment. When I'm finished, I'll have a movie marathon with a like-minded friend. We haven't seen the last two films, so it will be truly an adventure. Good to have some food ideas for that weekend!

Possibly Avatar/Legend of Kora? I think that would be interesting since the air-benders were vegetarian. Therefore, the recipes might be easier to make more accurate adaptations to😊

there's this movie, waitress, from 2007, in which she makes a lot of pies. may be a litte boring or repetitive to do it, but a vegan fest of pies would not be bad, in my mind...

I was literally just watching Twilight edits yesterday haha ~ I agree about the nostalgia, it's one of the few movie series I re-watch. Maybe I should read the books again too. That cauliflower looked so good! I thought you were going to make seitan but meat substitutes aren't my fav. Also I admire your commitment to even make the cereal from scratch!

Clair de Lune will forever remind me of Twilight. The scene where Bella sees Edward's room for the first time. And the house is so beautiful and cosy with all the windows and trees outside... I ALWAYS think of that scene when I listen to Clair de Lune.😍 This video is very cool. I love reading about food in books. It always makes me feel more connected to the story. More "inside" of it, if you will. Keep them coming! What about Harry Potter? The Weasleys cooked some pretty special things! 😅

I made the cereal and it was super good! I didn't have any applesauce, so I just used pumpkin puree and it worked super well! Thanks, Mina! :)

Mina to those who say " get a life " simply because you like something more than they may have....I reply: This is a fun part of the life that I personally enjoy. I like sharing favorite books, films, stories, music with old friends and some new friends. I might suggest to those annoyed with Twilight recipes that they improve their own sense of humor. No one these days should be taking their life that seriously. Laughing while sharing is simply more appealing. During Covid-19 it is even more important.

Wow, two days ago Twilight got recommended to me on Netflix and I skipped through all the movies in two days and I got super nostalgic haha and now I find this vegan twilight food video, that's perfect! :D I looved the books and was never 100% satisfied with the movies (even though I aso like Kristen and had the biggest crush on Robert as a teenager) but it's been so long since I've read the books that I completely forgot about Bella being a good cook!
