Mashed Potatoes:
- Golden Potatoes (about 1.5 lbs)
- Heavy Cream ( 1/4 cup)
- Butter (3 1/2 Tbsp)
- Salt
- Pepper
- Egg Yolks (2)
- Parmesan Cheese (1/4 cup, minimum)
The Filling:
- Olive Oil (2 Tbsp)
- Ground Lamb or Beef (about 1.5 lbs)
- 1 Large Carrot (grated)
- 1 Large Onion (grated)
- Fresh Rosemary
- Fresh Thyme
- Minced Garlic (5 cloves...I'm not driving)
- Salt
- Pepper
- Worcestershire Sauce (several splashes)
- Tomato Puree or Paste (no greater than a small can)
- Red Wine (several glugs)
- Chicken Stock (unsure, nonetheless it looks like about 1/4 cup)

It's been fun watching your cooking skills evolve over time. At first when you were a true novice, it was entertaining in a schadenfreude kind of way (I just about died when you were scraping a vanilla bean for a glaze and threw out the seeds) but now I love to watch the wide range of skills that you've acquired.

My husband wants cottage pie all the time. I make a large pan of it, we enjoy it for a couple of days and then portion out what's left and stick them in the freezer. Finding it in the freezer is always welcome.
One of my ABSOLUTE favorite things in the world... and either way you go, "cottage" or "shepherd's," it's like a big hug! Thanks for this!
1) Shepard’s Pie/Cottage Pie - School lunches in New England! Also very good with a cup of frozen peas tipped in the meat before turning it out in the casserole. Yours looked yummy. 2) The orange label Worcestershire [wuss-STAH-sheer] sauce is a British/Canadian thing and is SO MUCH BETTER than the cream colored label in the States. Stock up. (Yes, my hubby & I did a taste test between the 2 and there is a huge difference.)

Now that you said that, I’m shocked he didn’t use peas in his recipe. That would have elevated it! I must continue practicing my pronunciation of that damn word!

This shepherd's pie looks absolutely delicious! I love all the ingredients, and I'm also very happy about the ingredients that DIDN'T make an appearance here (you know what shepherd's pies often looks like)! This one looks totally YUMMY!!!
I had shepherds pie( with beef) at an Irish themed restaurant. I’d never had it and never will again. It was horrible so greasy it was gaging me. Yours looks good. Maybe I’d try it again if you make it for me.

If you had Shephard Pue once and it was too greasy.....you probably had a bad pie. Generally, it's wonderful comfort food.

I hate garlic presses because of the cleaning. Any suggestions? I’d rather mince. Also, i always double my shepherds pie recipe, but only the base. Potatoes don’t freeze well, but if I’m trying to get a meal on the table for my family, and I have extra mashed potatoes in the fridge: instant dinner!!😊

You can press a clove through the prongs of a fork a few times -- does a pretty good job

I always use a zest iron and just grate my garlic. Just rinse with cold water to clean. (As long as it's not dried)
Jamie's got moves! I love cottage pie because I don't eat lamb. Can you tell that it's lamb you're eating?

I’ve been using a “temp” kitchen since the beginning of the year because of a delayed move across countries. All my stuff was in boxes. But good news, I have my scales back!

The origin of the name Worcester sauce actually comes from black people... Originally it was called "black sauce' Then a black guy from America went to England and sat down in a restaurant... he saw this bottle of black sauce on the table and he called the waiter over and asked him in a southern black accent...
