I made baklava in 10 minutes | FeelGoodFoodie
Baklava Recipe
INGREIDENTS
¾ cup ghee, melted, plus more for brushing
1 pound box of phyllo 9”x14” sheets, room temperature
3 cups pistachios, finely chopped
½ cup granulated sugar
For the Simple Syrup
1 cup granulated sugar
¾ cup water
1 tablespoon lemon juice
1 tablespoon orange blossom water
INSTRUCTIONS
1. Preheat the oven to 350°F. Brush the bottom of a 9 x 13 pan with ghee.
2. Unroll the two sleeves of phyllo sheets and cut off an inch at the end to make them fit into the 9 x 13 pan.
3. In a large bowl, stir together the pistachios and granulated sugar until well combined.
4. Lay one stack of 20 phyllo sheets in the prepared pan. Add about 10 more phyllo sheets on top of the first stack from the second sleeve. Spread the nuts mixture over the phyllo in one even layer. Lay the remaining phyllo sheets over the nuts.
5. Pour the melted ghee over the baklava and tilt the pan carefully to spread the ghee all over. Cut the baklava into diamonds by making 5 cuts lengthwise and 9 cuts crosswise on the diagonal.
6. Bake until golden brown all the way into the cut lines, about 45-50 minutes, rotating the baklava halfway through baking.
7. Meanwhile, make the simple syrup by combining the water, sugar and lemon juice in a small saucepan over medium-high heat. Bring mixture to a boil, then reduce heat to simmer, stirring occasionally until the sugar is dissolved and the mixture is thickened but still clear colored, about 5-7 minutes. Remove from heat, add the orange blossom water, and set aside to cool.
8. When the baklava is done cooking, remove the pan from the oven and immediately pour the cooled simple syrup evenly over the baklava. Allow to cool at room temperature for at least 2 hours before serving.

The individual buttering of each layer of pastry creates a seperate air pocket between each layer. That's what makes baklava light and crunchy instead of soggy and dense.

Exactly. I'm American, and I love how people embrace the cultures and cuisines of others. I even like when people make their own personal renditions because gatekeeping foor is trash. HOWEVER do not teach a hack of another person's cultural cuisine and try to say that it's the same or better. Just call it the lazy way without an equal comparison because it will never be the same, regardless of what it is. We should still be humble when exploring the culture of others.
As a turkish person, I can say that a person that has tried baklava before will know this will taste different. Im not saying its bad, its just never has the same crispyness as real baklava. However I can advise you to try making 'sütlü soğuk baklava' its a different kind of baklava and is easier to make.

Exactly, the butter separates each layer of filo, if you pour the ghee on top not all layers will be lubed up so the filo will stick to each other and not be as light, airy and crispy

@@roopsoops202 thank you so much, yes I am in turkey right now and safe, my city is away from the center point of earthquakes however there are many people suffering as it was a big and a large scale disaster. (10 cities got affected by the quakes) Thank you all so much for your prayers and well wishes🤎🩶

that's a biiiig important detail in turkish cooking actually. a lot of food takes effort to make and no trad turk mom will show verbal love so cooking is their love language, mine included!

Then his mom came over and handed out real authentic baklava It was the best I ever tasted, I don’t think I have had any better baklava afterwards that could top it. It might also be my age and taste that have changed. But for an 8 year old, it was the best treat I ever had

Don't try it, you can see the bottom is dense and hard and not fluffy, there are no layers in the bottom and it's half the size it should be with that many layers of pastry.

@@12portals baklava is made with other nuts too! I’m used to the one with walnuts.. it’s also made with custard/cheese mix
To make it correct, yes you do have to. There's a reason it's done that way, the crispiness won't be the same.

Baklava is in top 10 pantheon of greatest desserts ever. Every time I get some I eat too much and feel sick, and I'll never stop doing that.
Never had pistachio baklava but it looks great. My family are from all over former Yugoslavia and tend to make it with walnuts.

This is a great shortcut idea for at home enjoyment without the extra work. However, I think the traditional way is the best way to go. Especially, if serving for guests etc.

Also u use less butter for the same results. Also if u don't do it will still be crunchy like on ur video but won't remain crunchy for a longer time. Especially the bottom part

I mean I disagree, because I'm Persian and my mom makes authentic Baklava with a similar method to this. Meaning she doesn't better every single layer. She does more layers than this video does, so it's like in-between. I love love love my moms Baklava, I feel it's the best in the world (I'm sure I'm not the only Persian/middle eastern child out there who feels that about their parents Baklava, haha), but seriously I wouldn't want it any other way. As a Persian, I'm not offended by this method! Lol

@Nina la Queen Oh yeah, I don't doubt that! Especially because you're used to that, and you grew up with that:-)! My family's magical touch was how my mom makes it, so I prefer it her way. But it's different for you because you have a different experience! Haha, for me, when we would sit around the table watching and helping assemble, and then our mom would poor the bubbling hot butter over a group of sheets, it felt magical to us! So I love that feeling and I love the taste. Bjt you and your family have your own beautiful method and experience of it, so as long as we're all experiencing our own magical moments, I would say it truly doesn't matter how it's made for each person! Because you and I could swap our mothers' methods, it wouldn't be magical for either of us because we want our own childhood Baklava. You know, as I write this out, I feel so lucky to have these special moments. Thank you for reminding me of them🥰

This won't be the same thing, you can see the baklava in her fingers isn't as fluffed as baklava is supposed be, however this is indeed a method that will save you time so if you're willing to sacrifice the extra crispiness from the fluffy baklava then this may be something you want to try

Yeah this isn't a hack it's just nonsense. It looks terrible and good not look fluffy at all. You can't even see any layers. You need the butter in between each layer so when it chips it releases steam and expand the layers. This isn't going to do that.

I'm literally addicted to baklava❤ the first time I had it was 5th grade when we learned about Egyptians. I made the most amazing 3d display of the Nile and pyramid we had a substitute teacher and she knew the assignment and she brought in the baklava❤ ever since I have been hooked I'm 37 now and still cant get enuff 😅

As a Greek person, who has worked in kitchens in a few different hotels while going to college-this trick might take 30mins instead of an hour but it will not taste as good. Trust me on this… we’ve had to make so many of them and we always took the time to do it the right way.

As a pastry chef, I’d defy you to be able to tell the difference because what she says is absolutely true the butter will sleep into every layer, which is what happens even if you butter each layer when you bake it the butter melts and will go into every nook and cranny. This method is definitely a big plus for someone making quick baklava, but I really don’t see that it would make a massive difference in the taste.

Plus, the taste and smell of ghee and butter are different. Obviously I’m not a pastry chef and I cannot explain my point in a better way but having worked with multiple pastry chefs who grew up with Baklava themselves, I can honestly say that you can tell somehow…

@@johnbuttersworth584butter doesn't go in-between all the layers because the sheets stick together even more than they already are when you cut them, also the filling nuts and sugar definitely doesn't taste the same when you just mix them together and toss it in a single layer (in our house it's usually mixed in a pan with the smaller pieces of access sheets until crunchy and delicious and put in every 10-15 sheet and buttered every two sheets)

I bake baklava myself from scratch because it's much cheaper and will taste more like love in the end! Baklava is not made like this. When you make the dough you make over 30 thin as paper layers each layer is covered with butter and then stacked so that there will be o ly 5 layers in the end. I use nuts and in the end when everything is assembled is when you cover it with 500gr of melted butter. You put it in the oven for more than 2 hours and afterwards you cover it with sugar water. I'm using the albanian recipe. My family used to tell me that baking baklava from scratch is too difficult a d takes too long to make but honestly if you do it correctly and get the hang if it- it usually takes me out 3 hours (without the baking time).

I was taught to do it with the simple syrup after it’s cooked. It’s very common in middle eastern and Indian desserts to use lots of simple syrup so it soaks it up 👌

I JUST heard about pistachio baklava yesterday!! Haha Im Greek and we make it with walnuts usually. I want to try this way so bad! Now I have to! 🙂🥰

I love her recipe, and it's great with either nut. Sometimes when I make it, I use half walnuts and half pistachios (depends on what I have on hand, plus walnuts are less expensive in my State). It turns out delicious every time.

@liexe6152 Yeah, im not even going to pretend i know the original nut, but we probably just had more walnuts in greece than pistachios. But all the islands have their own way, so this could just be our area's way.
As a Turkish Person. We often never make Baklava in our houses but we do buy it commonly alot as desserts. I'm so happy I found a tutorial to make Baklava at home. This really helped!

Not at all. Actually its used to make at home but somehow new generations getting lazy and instead of making at home they just buy it. So actually we make it at home rather than buying. İt's not a secret recipe at all. İf you ever heard ppl say 'ev baklavası (home made baklava) ' and even more liked one than buyed omes. You talked in such way that its not one of our desserts. so i wanted to clarify 🌺
OMFGG That baklawa looks soooooo good
So you all are whining and complaining about the fact that you don't think it's a scrunchie. But you know what? She offered us a quick easy way for a delicious dessert and when she took a bite I could hear the crunch. So why don't you try it before you knock it. I appreciate the fact that she came up with something that's so delectable in 10 minutes.
As a greek, Im totally offended by this. YOU CAN NOT JUST "PUT ALL THE FYLLOS TOGETHER" YOUR WAY OUT OF BAKLAVA! baklava needs love, needs patience, needs time. All my fellow turkish and arab people will agree!

I remember the first time I tried this ! I was so unsure of what it was exactly, but oohhh boy, it's wonderful !
My lebanese mom has been doing the butter in between each layer for years until she came across this video of you doing it like that and we've been having baklawa more often now 😩💙it doesn't taste any different from how she used to do it (edit she does it the new technique with butter still, not ghee)

As an Indian born eating Ghee... I will have to try to tell the difference if any one can send me both‼️🤣 Well ghee has its own hard to describe Character. But using it in other countries dishes I'm sure it will not give the same taste and flakey texture. But who know someone has more experience to use it and it doesn't make any difference in taste.👏

I tried baklava for the first time I had a food truck in Portland. And dear God it was one of the best things I’ve ever eaten. I’m a chocoholic so I didn’t think I would love this dessert as much as I did but holy crap it’s like my favorite dessert now. I rarely get to have it because so far that food truck is the only place I haven’t found that serves it And I was only in Portland visiting my dad’s family. I live in California, And I’m not a major city like LA so I have had no luck founding any baklava near me. So even though it seems like a ton of work I am tempted to try making it myself at home just because I miss it so much and don’t wanna wait until I go visit my dad’s family again to have again
To make it even tastier and aromatic in flavor you have to put some ground cinnamon and ground cloves in the sugar and pistachio Just a bit Thats a true greek baklava

I made it with this method but it didn't taste good the layers in the middle were weird and soggy not crispy and nice as if you butter each sheet.
Awesome easy recipe..thank you .I've made many types of Baklava..from savory to sweet..but prefer the Lebanese/Syrian use of Rose or Orange blossom syrup..

one pack for the bottom and another for the top. you need to lay down individual layers to get a better result tho bc this fast version will not be good.

@@lsdaukul2945 Ah Ok, I didn't know that. I know they make these in Turkey as well but I don't know where it originated. But I associate it with the middle east somehow. Maybe because I know more people from that area.
I would recommend using honey and water instead of simple syrup, because honey gives it a little bit of a specific taste. But otherwise, I think this method definitely thumbs up.
