Cooking steaks in a cast iron pan, IMO, is the best way. On a grill, your cooking surface is minimized to the metal grates that the steak is cooking on and will tend to be dryer because the juices will fall through the grill. Where as in a pan, you have a solid cooking surface of the whole steak. When seasoning, just use salt, anything else just sits on the outside of the steak, whereas salt will be absorbed into the steak.

I've cooked 2 A5 NY strips and I really believe simple is better with this type of meat. I did only salt and pan seared. Usually I like to do a butter bath on steaks, but for A5 wagyu, the meat can stand on it's own. One cool result of the pan sear method is that the steak has so much fat that it renders during the cook and essentially fries the outside. So the inside of the steak is juicy and fairly rare, but there's almost a crunch on the outside from frying in it's own fat. If you ever get a chance to try this cut of meat, go for it. I'm sure any way you cook it, you will enjoy it.

Like 6 years ago i graduated from university and went out celebrating with my now wife and parents. Due to the occasion we shared some Japanese Kobe Wagyu A5 prime cut (4 people sharing 75-100g). It's the first and only time I've ever tasted meat like that. The meat was good yes, but at the same time, in my humble opinion, also a bit too much. Almost 'cloying' (I think that's the word). As he says at 6:30 "It's like jello". The meat is so tender and fat that it almost feels like eating pure fat or something like jello. In my memory it actually lacks structure. I remember it as being too tender believe it or not. I don't think I would be able to finish a whole steak from meat like that. Do I regret doing it? No, I didn't pay the bill :-P Would I try it again in the future at a special occasion if I had to pay myself? Probably yes. Is it worth the money? No, not as I remember it. With that being said, it is also a special experience to taste meat like that and have the feeling of "I just had the creme de la creme of meat. It cannot get any better than this". Is it really the creme de la creme of meat though? If the Kobe A5 was just presented to me as any other meat, I think, that from a blind tasting test, I would pick something else (and I'm a guy that prefers tender, fatty cuts like ribeye). Kobe A5 is just a bit too much in my opinion. If you love to eat big bites of *only* the fat at the edge of your steak, without any meat, then Kobe A5 would probably blow your mind.

Hey Guga, thanks for your great videos. After watching your videos, I have three requests for future videos: - Please try some other cattle breeds than wagyu and American beef. - How do you clean all your pans and other cooking ustensils so they continue to be so shiny ? - Please cook a foie gras in a terrine using sous vide. And yes I'll repeat those requests often. ;)

My Daddy always cooked bones with the marrow with I loved. Why can't we get that any longer? We have our Elk and Venison butchered so I'll ask to have bone with marrow saved to cook in butter.
