Honestly I kinda miss it in a way. I'm 950 now and in the opening at 950 you never know whether your opponent is going to just play utterly ridiculous moves or like 8 moves of pure theory, and honestly I'm not sure which is more dangerous. At least at 500 you can rely on the games being consistently ridiculous.

In cooking, a sauce is a liquid, cream, or semi-solid food, served on or used in preparing other foods. Most sauces are not normally consumed by themselves; they add flavor, moisture, and visual appeal to a dish. Sauce is a French word taken from the Latin salsa, meaning salted. Possibly the oldest recorded European sauce is garum, the fish sauce used by the Ancient Romans; while doubanjiang, the Chinese soy bean paste is mentioned in Rites of Zhou in the 3rd century BC. Samosas accompanied by four sauces A chef whisking a sauce Sauces need a liquid component. Sauces are an essential element in cuisines all over the world. Sauces may be used for sweet or savory dishes. They may be prepared and served cold, like mayonnaise, prepared cold but served lukewarm like pesto, cooked and served warm like bechamel or cooked and served cold like apple sauce. They may be freshly prepared by the cook, especially in restaurants, but today many sauces are sold premade and packaged like Worcestershire sauce, HP Sauce, soy sauce or ketchup. Sauces for salad are called salad dressing. Sauces made by deglazing a pan are called pan sauces.

About learning Catalan at 600-700 range, I tried that. Basically what happens is you let something through early because you don't know how to keep the position solid after you're out of the opening five or so moves, opponent gets a knight in or a queen, trashes that entire side of the board before you can manage to evict it somehow. Usually it's a knight. Knight invasions were my least favorite thing to deal with at that level. Especially so with short time control as the catalan can produce positions in unskilled hands that open the door for a knight to repeatedly check you, no mate threat just check after annoying check, running down your clock.
