How to Smoke a Brisket on a Kamado Joe

I cooked a 15 Ib prime brisket from Happy to Meat You and the tenderness & taste was off the charts great! This prime brisket was a submission for the BBQ Pitmasters of KZread Competition.
We used post oak wood chunks, smoked at 250 on the Kamado Joe with Sloroller and wrapped in butcher paper until prob tender. This was a 6 hour cook with a 1 hour rest! Enjoy!

Nice Brisket on the K Joe. I would have liked to see that charcoal being light as well as the slow roller in action. Nice presentation of the finished product.

Excellent video and cook... Prime brisket is usually worth the money. Here, its only 30-40 cents a pound more than choice. My sam's club carries prime but their choice is angus beef and it's always good too. I really can't tell a difference in the two and I have had occasional 'bad' briskets from both classes. It's an unfortunate fact of life that ALL cuts of meat won't be great :)

Thank you so much. Typically, with the heat source coming from the bottom, fat cap side down is the preferred method. The thought is that helps protect the meat while cooking. I would encourage trying both methods to see what you prefer.
Looks great. I am going to smoke a 6 pound brisket on my Kamado Joe Classic. I have watched videos to get ideas on the best way to cook / smoke. I was surprised it took only 6 hours at 250 degrees for a 15 pound brisket. I was under the impression and reading it would take approximately 1.5 hours per pound to cook at 225 degrees.

Thank you, Gene. Yeah, the whole 1.5 hours per pound is just a base line. Over the years, I go by temp and feel of the meat more than time. Every piece of meat is going to be different with a variety of variables IMO. Anytime you crank up the heat to 250-275 or beyond, obviously you will cook a lot faster. Another thing I feel is just important is the rest time to allow all the moisture & juices to be absorbed back in before cutting into it. I rarely do 225 on the KJ anymore unless I'm doing a long cook and will do that for the first few hours and then crank it up to 275-300.
