How to Sear on an Infrared Grill | How to Grill with Grillabilities from BBQGuys

Steakhouses use infrared burners, so why shouldn’t you? Learn how to use an infrared burner from Chef Tony, who has enough restaurant experience to know just how legit these things are. Searing steaks on an infrared burner produces an incredible, all-over sear that’ll make guests question whether they’re in your backyard or their favorite steakhouse. To achieve those mind-blowing textures and flavors, you need to know the key differences between infrared searing burners and the conventional gas burners found in most grills. Chef Tony provides all those important details, along with an explanation of why it’s so important to preheat your entire grill even if you’re cooking on only the infrared burner. He’ll even show you the technique for preparing a well-done steak without overcooking the exterior over intense infrared heat (even if the idea of anything beyond a medium cook gives him the shakes). With these tips in mind, you’ll be able to sear on an infrared burner like the head steak chef you know you are!

Chef Tony Matassa grew up in the restaurant business, starting in his family’s New Orleans eatery before running one of his own. No wonder he has such vast knowledge of and passion for food science, which he puts to use every day as our jack-of-all-trades (and master of many). Longtime fans of the channel know Tony has been testing grills for more than 10 years, though we’re partial to his performance in our recent Grillabilities℠ series.

You showed both a stainless grate and the cast iron that comes with the napoleon. I would like to replace my IR grate with the SS (cant maintain the castiron) Any thoughts?

@@BBQGuys I am looking at the Vision Grill with the duel fuel option. It comes with a charcoal vent and a gas insert to use propane. So I would have loved to see how it compares to the Kamado Joe.

As an avid bbq'er I am worried about the cleaning of the infrared burner. In past grills the infrared burner was mounted on the side but now it is positioned right under the grill. What happened to any liquids dripping on the infrared? How is it cleaned? Any thoughts??

They tend to burn right off which leaves nothing to clean. Best to simply let them burn of for about 5-10 mins after use.

Was this a how-to video? Did I miss the how-to part? How high? How long? How many times do you flip? Does the meat need to be dry? I mean this video did nothing to show me how to do use the feature.

Ya i agree, i like a medium rare too but i have always liked a fully cooked steak too, texture is different but it tastes different as well. The infrared would be critical to getting a good hard sear quickly so its easier to cook the internals from a control point of view i think. Napoleon grills have used the infrared side burners for years, when fat hits them it evaporates right back up into the meat, its impressive

You don't need a infrared burner, you just don't all you need is a gas grill propane grill, you get it hot enough, and when you cook it, you flip it when you're supposed to, that's how you get the Steakhouse taste

Right. But maybe I don't have a grill that has both kinds of heating element, so good for you, but useless advice for most people.
