Hi mate, I tried this yesterday, had them on 250f and they took well over an hour. They ended up being wayyyyy too Smokey. Just used lump charcoal and a natural fire lighter, no wood. Any advice? They weren’t as thick as yours and took about 1 hour 20 to get to medium First time on the komado, lots to learn!

Looks incredible! What intern temp do you usually start the seat at? Guessing it depends on the thickness? Rarer for thinner steaks?

I took these to 57c which is medium rare….so I took them off at around 53c ish and then seared them! The size of the steak shouldn’t matter but thicker steaks are more forgiving
