Dried Mushrooms - Mushroom Recipes - How To Rehydrate Dried Mushrooms - Mushroom Types
Not sure about you but we always have a stock of dried mushrooms in our kitchen. The reason, well they last forever are super tasty and very easy to use. Below we have set out a few common types of mushrooms and a couple of recipes for you. But let us start with how to rehydrate them. This process is super easy.
01 - Shake or blow off any dust, they sometimes with have this depending on the type used.
02 - Place them in a bowl and either add hot, warm or cold water and let them sit, again depending on the type being used for about 30 mins.
03 - Now Simply drain off the water & give them a gentle squeeze.
04 - Now the water you have, whatever you do, do not throw this away, you now have a fantastic stock to add to your recipes.
So simple.
1. Agaricus
The common white variety mushrooms are sometimes dried at button stage.
Reconstitute: Whole mushrooms - up to 30 minutes. Sliced mushrooms - up to 10 minutes.
2. Chanterelles, Egg, Girole, Girolle, Pfifferling
Popular edible wild mushrooms from Europe and North America.
Characteristics: Trumpet-shaped and have a strong apricot smell.
Reconstitute: Soak for 15-20 minutes in warm water.
3. Black fungus & White Fungus Cloud, Wood, Tree, Silver Ear
Primarily used to add a special texture to Asian dishes.
Characteristics: Cook quickly over high heat for a crisp texture.
Reconstitute: Soak for 15-30 minutes in warm water. Drain well and pat dry with paper towel.
4. Shiitake Black Chinese
Ideal for Asian dishes.
Characteristics: Intensely flavored.
Reconstitute: Soak in warm water for up to 30 minutes. Strain the soaking water and add to the dish to intensify flavor.
5. Cepe Cep, Bolete, King Bolete, Borowik, Steinpilze, Stensopp, Polish, Porcini
This is an entire family of wild mushrooms, gathered in the forests of Europe during the northern autumn, then dried and imported into Australia.
Characteristics: Porcini is one of the most popular of the cepes.
Reconstitute: Soak for 15 minutes in warm water. Add to casseroles or stews at the start of the cooking process.
6. Morels
European wild mushrooms with a hollow, honeycomb-like caps and a spongy texture.
Characteristics: Rich, earthy flavor. Best used in sauces and slow-cooked dishes.
Reconstitute: Rinse or wipe dried morels before soaking for 15-20 minutes.
7. Porcini
One of the most popular of the Cep mushrooms
Characteristics: Rich, meaty flavor.
Reconstitute: Soak for 15 minutes in warm water. Add to ragouts, stews and risottos at the start of the cooking process.
8. Truffles Black, White
Edible fungus which is not technically a mushroom. Grows at the roots of specially inoculated oak trees, 5cm-30cm below the ground. Most truffles are imported from the forests of Europe, although black truffle plantations established around Australia.
Characteristics: Canned or fresh, truffles are expensive. Highly perishable; use fresh truffles within 1-2 days of purchase
Usage:
Sparingly in fresh pasta, risotto and egg dishes, where the flavor can dominate. Thinly slice and cover in olive oil to infuse the oil, which is then drizzled over the dish just before serving or at the table.

I have some dried mushrooms to use before the next batch of drying , but didn't realise you just soaked them until soft , thought you had to add something , simple even I can manage that !

This was very helpful, thank you! I wanted to add shittake mushrooms to my miso and dashi noodle soup, but i bought mine dried. I also now want to use the broth for when i'll do a risotto, so thanks for that tip as well.

Many thanks, I been tryin to find out about "how to grow mushrooms inside" for a while now, and I think this has helped. Have you heard people talk about - Heenyan Mushroom Organifiction - (Have a quick look on google cant remember the place now ) ? Ive heard some extraordinary things about it and my brother in law got excellent success with it.

Thanks for the hints. I have purchased dehydrated mushrooms, but always had a problem with them ending up like chewy sponges that were in-edible.

Thank you I looked all over for a video. I don’t what kind of mushrooms 🍄 I have. This is from my local. Oriental market, it’s in Chinese. I wanted to put them in PHO 🍜 soup yet do I soak them In broth -the soup, or water first?! After your video I decided to soak first then add to the soup later.

What is the texture like compared to fresh mushrooms?
Ive tried rehydrating lobster mushrooms and I feel it's definitely not as good as fresh but maybe I didn't wait long enough?

What about cleaning them? I've cooked them in stews and bit into small hard sand-like bits. For the water I think it should be strained for debris as well.

Yes dust them off or clean before soaking, it also depends on the mushroom type and batch.
could spores still drop after rehydrating
I've gotten dried mushrooms that mentioned using sulfate. I rehydrate them and they tasted nasty and they smelled awful while cooking them. I'm not sure, but I think that was some kind of preservative. Is there a way to better get that out like multiple soaks? I really loved the texture of them.

I bought dried and idk what mushroom but it's a very dark one that says description name 'gf mushroom Shita' and what happens I cooked it fry along with broccoli and the horror it was bitter. Even the broccoli absorbed the bitterness..... I dunno,, but if I water them would the bitterness go away? Should have bought the ones in the cold shelves instead.
do you still have to re hydrate them if you use them for stews or soups or sauce

That’s what I was wondering 💭 🕵️♀️ I looked all over and couldn’t find anything online about that I’m making a soup I have the broth and the soup already eaten and putting in a slow cooker I was just gonna put the mushrooms in there but after seeing this video and the way they soaked and he drained them I decided that I would still come separately kind of drain out some of that extra mushroom juice maybe some dirt to not sure and then put them in the soup: PHO.

Hey man I rehydrated my mushrooms according to the instructions which were very similar to this video however they were still very chewey and felt uncooked in the middle after sauteeing, any advice?

Sounds like you did not soak them long enough, some mushrooms take a little longer than others.

What if they smell?
I’ve had issues with the stems being tough and have had to cut them off the hydrated mushroom. Do you have this problem?

It might depend. Because if you dried them and killed it. You can't expect to revive it back to life by soaking it in water
What I would do is put a lid on the bowl.
