Chinese mushrooms (dried shiitake mushrooms) are a staple ingredient used in Chinese cuisine, especially around Chinese New Year (Lunar New Year) whether it be for stir fry, soups, stews or braised dishes; and for good reason. They're just so meaty and juicy but you need to give this versatile ingredient the time and care necessary to rehydrate them properly - something that's often skimped on with quick rehydration methods. At the very least, in this video we'll show you how to accentuate the positive properties of rehydrated dried shiitake mushrooms and elevate your dishes even further.

    Thank you! I was given a huge packet of dehydrated mushrooms, and it was sitting for a month in the kitchen looking at me. I would look back at it, not knowing what to do.     I followed your instructions as I have never tasted a Shiitake Mushroom that I know of...anyway, it was a fascinating experience. The mushrooms looked just like in your videos through each process, which was just great, But no video could have prepared me for the wonderful, wonderful taste of the mushrooms in a quick dish I prepared. They were smooth, meaty, and they added a flavor..a gentle flavor, that makes me want to put them in everything I cook!..thank you so much for showing the way to such a flavor enhancement. - Warlin7

    are you not removing too much of the mushroom flavor with too much washing?

    You would think that, but the mushroom flavour was still strong despite the number of washes. We need to consider what happens if we don't wash it enough times: there will be dirt/mud/yuckies still stuck on/trapped in the mushrooms and there will be an unpleasant bitterness to them. We got our mushrooms directly from a village where no sanitary exportation checks are made, so we have to be extra careful when dealing with ours. If you find that the water you wash your mushrooms in is no longer murky, then it's fine to stop there and move onto the flour.

    Yes this is removing too much umami, washing is fine, but this is too much washing.

    I have hard time believing what he calls murk is actually dirt. It is... just the mushroom itself... i definitely won't be doing this.

    Thank you for this very informative video! I've hesitated to even try using dried mushrooms because I've seen videos of people preparing mushroom stock without really cleaning (or not showing how they clean) the mushrooms beforehand. So this is really helpful! Again, thanks!

    Why should we cut off the stems?!! I'm italian and we do not throw anything away from a cleansed mushroom.

    @@carvedwood1953I do cook them, taste great but they’re rubbery and the stems worse. But I use them for other preparations.

    @@simonetartocchi6968 yeah man that is WHY you cut the stems off lol. they are super fibrous and tough. Either use them for stock or dry and powder.

    once i tried the soaking in cold water method thingy. even though i washed them again before cooking, i still ended up with a somehow bitter mushroom. then with the remaining mushroom i tried to go a longer process. washing them repeatedly, using flour, and yep. the bitter taste finally gone. i don't care anymore with maximing its taste 😂 they still tasted good without the bitterness anyway. honestly that was my first time having a shiitake mushroom, a dried one at that. perhaps a better quality dried mushroom wouldn't require a long process like this. mine i believe was a chinese dried mushroom. as far as i knew, the method to cultivate them is using greenhouse and different growing media which, in short, is less natural than the japanese counterpart (but way much affordable).

    Just curious as to why you wouldnt purchase fresh mushrooms (instead of dried) on a regular basis. Less work for everyone, no?

    I was told my a a Chinese couple to just let them soak for about 15 mins squeeze the water out because when I soak for 6-12 hours extra you just loose all the goodness and flavour

    Put those mushrooms to good use over the months! That being said, we're not really a fan of and, as such, don't typically cook solely with chicken breast (we usually just sous vide chicken breast seasoned with salt and pepper). We do have a 'Braised Mushrooms with Bok Choy' video on the channel, but videos making use of these mushrooms will slowly populate the channel as time goes on. Hopefully they meet your expectations!

    It seems like, up until the steaming, there's no real opportunity to set this down and come back to it later, so I suppose I'll need a couple of hours available

    Yeah this is one of those preparations where you set aside a hefty amount of time and just do a huge bulk of them. Half a day gone, but many hours saved over the year.

    the amount of cleaning following by steaming leads me to an unsettling conclusion. where are these mushrooms grown? and what fertiliser or soil/conditions are they grown in? ive heard many tales of the types of things used for fertiliser from faeces to....well, i dont want to go there. I hope im very wrong.

    Shitake are cultivated on logs, feeding on the decaying wood, no need to worry about feces😂 Dried shitake can be a little bitter and woody. This method is meant to get the most pleasant possible texture and flavor from dried shitake, which

    dont think this needs to be so complex- having cooked and used theses foods for years so not needed, unless you eat a pound of dried mushrooms a week not sure why after all that process you then froze them, pull out and use what you need, soak cler rinse then cut and use etc-keep cooking fun and simple
