Hated fennel as a kid, LOVE it now. Great taste, extremely healthy, versatile... And it tastes great raw, too. You can't go wrong with it!
I grow fennel. I NEVER throw away the stalks. Yes trim them off the bulb but then slice them thin and you can stir fry them or bake them or add them to a soup. They take a little longer to cook so if you are adding them to a soup put them in the pot first and bring nearly to a boil and keep them that way for about 20 minutes or so before adding other ingredients. Of course I harvest mine young so they are really sweet and tender. The bulb will continue to grow without all the stalks just leave a few on for photo synthesis. The fronds are good in all kinds of cooking. I add them to my pasta sauce. NEVER throw away the greens of a fennel plant as they still taste like fennel, are nutritious and can be eaten if you know how to prep them. And if you really don't want to work on it you can just add whole stalks to a soup or sauce to add their flavor then fish out the stalks after and toss them into your compost pile.

Just a hint darling. You need to glue the black sleeve on you knife between the handle and the blade. I have the same knife and I glued mine and it avoids getting more moisture into the handle. Best regards from Rio de Janeiro and congrats on a good video.
