How To Make Trini Fish Broth | Foodie Nation

Chef Jason teaches Kezzianne how to 'bubble' a 'Trinbagonian' Fish Broth/Broff:
*Yield: 8 - 10 Portions
INGREDIENTS
2 Lbs of King Fish/Red Snapper
Juice of 1 Lime
1 Tsp Salt
¾ Tsp Black Pepper
3 Tbsp Fresh Green Seasoning
2 Tbsp Vegetable Oil
½ Cup Onions, chopped
1 Tbsp Garlic, minced
6 Pimento Peppers, minced
2 Sprigs of Fine Thyme
2 Medium Carrots, peeled and sliced ¼ inch thick
¼ Cup Celery, medium chopped
¾ Cup Pumpkin, medium diced
¼ Cup Tomatoes, medium diced
8 Cups of Water
6 Small Ochros/Okras, sliced in half, head and tips removed
5 Oz Potatoes, peeled and largely diced
5 Greens Figs, peeled and sliced ½ inch thick
1 ½ Tbsp Salt
1 ½ Tbsp Chadon Beni/Culantro, minced
3 Tbsp Chives, chopped
3 Oz of Macaroni
1 Tbsp Salted Butter
2 Tbsp Fresh Lime Juice
Salt & Black Pepper, to taste
METHOD
1. Have fish scaled, cut into ¾ inch thick pieces with head and tail retained.
2. Place fish pieces into a bowl of gentle running water to cleanse and squeeze fresh lime juice onto fish to aid in the washing process. Strain all water properly and season with salt, black pepper and fresh green seasoning. Let sit to marinate.
3. Meanwhile, place a large high sided sauce pan over high heat and add the vegetable oil.
4. When heated, add the onions, garlic, pimentos, thyme and sauté for 2 minutes.
5. Add the carrots, celery, pumpkin, tomatoes and cook for an additional 3 minutes on medium heat.
6. Add in the fish’s head and tail and allow to sear in the pot to develop a light brown colour for 3 minutes.
7. Add in the water, okras, potatoes, green figs and salt. Stir, cover and increase heat to bring to a boil.
8. Once boiling, reduce heat to medium and bring to a simmer. Add the chadon beni, chives and break macaroni strands into three and add to the simmering broth. Continue to simmer for 10 minutes.
9. Remove cover and insert fish pieces to cook for 8 minutes.
10. Once fish is cooked, add the salted butter and some of the lime juice. Taste and add more lime juice if needed and season with salt and black pepper to your desire.
11. Once happy with flavors, remove immediately from stove and serve in soup bowls.
12. Enjoy on its own or with a slice of crusty bread on the side.

    Dear Foodie Nation, many thanks for this recipe. I’m the caregiver for my mum who has late stage Alzheimer’s. She’s in hospice care now and having a hard time eating solids so I’ve been making soups. I’ve been trying to make as many soft, creamy, nutritious foods that she can easily eat. This broff is a winner. It’s chock full of nutrients and delicious. And I’d like to think that it reminds her of her home in Trinidad. We live in NYC and it hurts my heart so much that she will never see her home again. Your recipes bring a little home to her. I never comment on videos, but wanted to thank you for bringing a little joy to my mom as she nears the end. 🙏🏽 ❤️🙏🏽

    I am shocktified..I never hear you have to pay for fish tail and head seperate..that's robbery..anyhow..fish broth is one of my favorite dish and that's just how i prepare it.💛

    Fish broth give twist in Dominica the nature island give smoke meat like chiken locaal pork pig snout if make white broth also pig snot smoke use yams carrot cabbage green bananas lime chrisrtophene dumplings

    You know something they did a great job! I know this is going besides the topic but they make a nice couple. I know he is Indian and the norm for him is Indian women . However , they have good chemistry. He knows a lot relating to cooking and she is still learning though she may know how to cook certain dishes. To me they bring balance to each other!He sometimes hurts her feelings and then she bounce back. I’ve seen this Chef on other shows and the interaction with other female hosts wasn’t appealing . This female host does a great job with her poise mannerisms and willingness to learn! He is the teacher no doubt but they have great chemistry. This is what a relationship is about, peace! So to let you all know I’m not trying to start anything. I’m just saying .

    I just made this, my grandma used to make this for me all the time. She recently passed and I didn't have the receipe. I loved all the techniques this was so easy to do. Im also glad you didn't make it in a pressure cooker lol. Currently, my belly is full. THANK YOU!
