Interesting video i made one yesterday but i pop the rhubarb into a saucepan with sugar and cook it before putting it into pie, I do the same with apple pie. Good tip with the thickening starch will try that.Many thanks.

Great question! It's an extremely similar method you will just need to add 30g sugar to the pastry and the sprinkle some sugar on the top before and after baking!

Growing up in Cumbria, England we made these all the time. Called them Plate Cakes. Definitely not just Irish.
